I was introduced to corned beef hash with eggs at the Four Ambassadors Hotel in Miami back in the mid 60’s when on a business trip with my dad. It’s been a staple of mine ever since. Oh,and I met Cassius Clay on the elevator coming down to the restaurant. Super nice man. I was a fan my whole life.
Went to America and had my first corned beef hash experience at a local diner. Now i want to know how to make it at home ... and i KNEW chef John would have a recipe on this.
I'm so glad he changed his style of speaking in the later videos. He might get a lot of complaints for it, but it's so much better than the deadpan delivery in these early recipes.
Actually i think his 'enjoy' here sounds a bit more authentic than the 2-tone variety we get nowadays. recipes and banter however are uniformly excellent.
I for one enjoy that he is focused on the recipe, and not so trying to entertain us. He does use a little humor but you have to really listen for it. Thanks for a great recipe.

G'day Chef John, Outstanding! An American classic. This method, by the way, works equally well with any left over roasted meats, even chicken and turkey. But the one to die for is fatty, leftover roast pork! Oh, sooooo good! Good video!
I made this today. I overcooked the potatoes, and I used salsa verde instead of tomato salsa, but it was still completely delicious. The poached egg totally makes it. Thanks for the recipe!
This actually looks pretty good. When I was growing up, my grandma would make regular canned corned beef (not hash), and saute it with chopped onion and garlic and serve it over a bed of hot, steamed rice for breakfast. In the Philippines, this was our idea of comfort food. Yummy.
Loosely followed this recipe to make some corned beef hash using last night's leftover corned beef and potatoes. Added a scrambled egg on top instead of the poached egg. Yummy!
Sublime! The poached egg (on top) really is the ultimate way to enjoy a well-crusted corned beef hash. I serve mine with sliced tomatoes... just awesome!
I used to go to a kind of a upscale restaurant at a marina that had prime rib every Saturday night and then Sunday morning they would have prime rib hash on special each week. It was absolutely delicious.
Tis amazing - I frequently by a can and add an egg, but this is terrific looking. Also the first hash recipe were it's mentioned to get it crusty!!!! Yum.
I made this on the weekend and added some fresh mozzarella and prosciutto on top with the poached egg, and WOW!!! totally freaking awesome!!! will be doing that again.

I crust my hash on both sides then break it all up and mix it together and then re-crust it, this works great especially if you have a deeper pan rather than a wider one, so you can crust the majority of the hash and get crispy bits throughout!
Thanx for proper serving. I use Mary Kitchen hash and crisp the hash using 2 Lodge 8" skillets. Get one skillet way too hot. Now put it on the hash in a medium heat skillet. COOK IT. When done, put your egg on the hash in the bottom skillet and go to town!
To those complaining about CJ sounding unenthusiastic in his old vids, it's because he is. These were the early days of YT vids and lots of posters were trying something, anything as a hook, including CJ. The singsong delivery and the "...and as always, Enjoy..."came later. It worked for him and made him a YT superstar.
Your hash looks the best out of anyone's I have seen! Instead of corned beef I would use a breakfast sausage. Only because no one like corned beef in my family.
Great video and Corned Beef Hash has as many recipes as there are people who make it. Me? I start it like you with the Potatoes. Add some minced Portuguese Chorizo and some minced Onion. Brown it like you do and serve it with a couple of Over Easy Eggs on top. Also a couple of dashes of Tabasco on the Eggs wakes everything up. Ed
my grandfather gets it to almost that crusty point he wants using a cast iron skillet, makes divets in the hash, and cracks eggs into the divets. Then he bakes it in the oven until the eggs are cooked through.
I don't have the patience to crust it like that so I just get the majority of it nice and crispy and call it good. I can still eat canned corn beef hash but homemade hash from the brisket is a nice treat once in a while.
My nana used to cook this but it was a cheap stew dish, you boil potatos onions and corned beef in beef stock served in a bowl with crusty bread. Theres also another corned beef hash recipe, you fry corned beef onions and baked beans, never tried that one though.
