Making your own corned beef is awesome! I've made my own maybe a dozen times! Can't beat it! I leave out the nitrates - gives the wife a headache. Corned beef sandwiches are great, but Rubens are so much better! I make my own dressing. Really strong - use it sparingly on a salad! Really sad that Katz's Deli & Corned Beef Emporium is closed for good. I don't live anywhere near there, but felt a ripple in the force! Really cool they allowed filming! Something to remember them by! Thanks for the video!

That place **is** the 'center of the universe' for Jewish delis, period. Some place in Canada that leeches off that name is irrelevant to the rest of the world.

It’s difficult for me to find nitrate where i live. You sure it’s ok if i skip it? I know the beef is not gonna turn pink (bummer 🙄). Will it effect the taste or texture?

First, big Michelle fan. Second, that food, it all looks perfect. Third, deli corned beef on rye has the stacks of paper thin cuts of corn beef and I saw you made like 1/4" slices. Just as good? The thin slices across the grain make it impossible to find any bite that isn't perfectly tender, I suppose if yours was just that tender it wouldn't need it! To tell the truth, I like to slice it 3/8" and just eat it in my hand:)
