Cornmeal Cou-Cou & Salmon Gravy

Cornmeal Cou-Cou is one of Barbados national dishes, its served with flying fish, salmon or saltfish. In this video I served it with Salmon.
Here are the ingredients for the Salmon Gravy
1 Onion
8 cloves garlic
1 bell pepper
1 tomato
thyme
ketchup
all purpose season
Ingredients for Cou- Cou
2 cups Cornmeal
4 cups water
2 cups of okras
salt
Start by first making your gravy, saute onions peppers, garlic add season salt, ketchup, water and salmon lower stove and let simmer.
While Gravy is simmering start Cou-Cou
add water to cornmeal to soften meal
cut the bottom and top of okra and cut into rings, place slice okras in a saucepan with water.
add salt to taste bring to medium boil for a few minutes until Okra soften.
add a quarter of the liquid back into saucepan. Add soaked meal, you'll need a wooden spoon to stir Cou Cou as it cooks, Stir constantly to avoid lumping. add Okra liquid gradually when Cou-Cou starts to bubble continue stirring for another 2-3 mins.
slice a cucumber add salt and lemon. Serve gravy on Cou-Cou with cucumber and enjoy.

My grandmother used to season her Okra water with lots of onions, thyme, other fresh herbs, a little garlic, white pepper, fresh chives and scotch bonnet pepper. She used to separate the okra water from the Okras once they were cooked and add them at the end during the final stirring. She would grease a bowl with a tiny amount of salt butter (Clover Queen usually or occadionally Kerigold), and round that cou cou up in the bowl, serve it with the gravy poured into a well at the top. You could eat hers with a knife and fork. She used to say it was done when you placed the stick in the centre of the cou cou and stood tall. I only gained an appreciation for it as an adult after she had long passed and I couldn't get mine to come out like hers so I don't bother to make it. I preferred breadfruit cou cou (still do, to be honest).

Hello. Enjoyed your instructions. I cook Cou- Cou about the same, however, I always served a piece of sweet potato on the side. I was born in Barbados and has lived in New Zealand for over 50 years. I still cook Barbados meals sometimes. This one is a favourite. Thanks.

Once you've eaten bajan foods it's hard not to continue eating it, Those old people sure knew how to cook with soul. I don't get to eat cou cou very often but when I do eat it, I love to have some pickle cucumber on the side😀

I'm American and this dish is one of my favorite Bajan dishes. One of my best friend's mother is Bajan and when we were kids growing up, her mom made this dish. I know traditionally flying fish is used but here in the U.S. it's very hard to find. One of the things my friend's mom did is she fried the fish, then added it to the gravy to smother it and it was the best thing next to her cod fish cake/fritters and her curry goat. My friend's mom has moved back to Barbados after she retired several years back and I miss having her here to make it. Thanks for sharing. Now I can make it on my own.

@@Tinaraine When I was a kid I had the opportunity to visit Barbados and 2 weeks before leaving I came down with what is now known as the German measels. No one knows to this day how I caught it. Sadly I've never been but someday before I leave this world I plan on going.

Love the story of your mother because a lot of people that came out of the islands do not get respect but the culture gets lots of respect. I love the Caribbean flavors it’s different and when authentic people like you cook it then I know this cook knows what they’re doing. I’m only 17 and I’m learning. Just love it

I remember my great aunt use to make it mellory ! I tried explaining this to my Trinidadian, so instead I made it for him. He loved it. In Trinidad they put carrots and peppers etc in the coucou. I say that’s not coucou. You either sit in liking your coucou firm or soft, I prefer mine more on the firm side so that you make a spoon indentation on the top which holds the gravy. Wow yum. Mildred you are absolutely right! Cou cou is all about the gravy, a sweet potato would have been nice and of course I have a bottle of my good old bajan pepper sauce.

Good job! I absolutely LOVE me some Cou-Cou and I was glad to learn from my mother how to make it while she was still alive. I have about 2 Cou-Cou sticks which I’ve had for many years, but since 2008, I decided to start using a WHISK! Since using that, I’ve never went back to using my Cou-Cou sticks again, and my cou-cou ALWAYS comes out smooth - not one lump! Cheers!

I really enjoy your videos and cou cou is my favorite meal n whenever I go home to Barbados my mum would have my cou cou waiting for me with a cup of tea. My mum passed away 3 years ago I miss her so much . Tomorrow is her birthday and I am going to cook cou cou with Canned salmon. God bless

i can watch you cook all day! my husband is bajan and the only chance i get to watch real bajan cook is when i get together with my mother in law! my cou cou when i do it on the stove top often comes out green, i started doing it in the microwave but i think stove top taste better!

Girl you have to wash those tops, you have no idea what crawled on them. I can not eat cou cou with just a little sauce, once the sauce is done that's it for the cou cou, I don't want it anymore. Thanks for watching.

This is one of your dishes not completed lol.Remember cou cou is a island .Next your pot should be steaming when you finish it should have a mellow texture and complete in a ball don’t forget a spoon in the middle.My grandmother style 100+5 Bajan. By the way we don’t soak our meals .That young people who learn it at the schools.

Oh you poured away all the flavour! The water comes from when the salmon is steamed in the can. I find the red salmon gravy is even better than the pink. My mouth is drooling!

I had a friend when I was growing up in the Boston area who used to tell me how his grandmother kept the kids behaving in the kitchen. She would threaten them with "I give you bahand slap with my cou cou spoon!". I never knew what a cou cou spoon was until now!

You can put pepper sauce on the cou cou when you are ready to eat it. Cut back on the salt a bit

I put pepper sauce on everything especially cou cou. And yes definingly have to cut back on the salt. To much salt not good for any body.

Thanks for the feedback. Is there a video on making Jug Jug ? This is the one that I was shocked to find out that most of our young people know nothing about this dish, can you imagine meeting young Bajans who have never heard of or tasted Jug Jug thats like saying where is Brownes beach !

Hi Carol, most house holds in Barbados always have a cou cou stick, next time I go home I may see if my mother's is there and take it. I don't know what I'll do with it. I prefer my cou cou in the microwave, it's much faster and easier.

Hi Tina,that cou cou looks real inviting, I made the same thing for Good Friday. I usually make it a few times per year with the canned salmon as well, can't get any of Barbados fish here (Canada) but it comes out good anywayl, how about a slice of(real ) sweet potato along side it. You must try the microwave version, I learn that from my sister in the UK.

Hi Tinaraine - I plan on cooking cou cou and red herring tomorrow and thought I would watch your recipe. I realize that you didn't say that you couldn't and flying fish is Barbados National dish as education for non Bajans who might be watching. Also, you discarded of the salmon water from the can but added water from the tap. Could you have mused the salmon water as well? Just asking..

Making cou cou today, I think my mother use her cou cou stick more on me than in the cou cou. I am in The Netherlands and all my kids were born here, when they are being naughty, I say to them don’t let me get the cou cou stick, ( which I don’t have) or they don’t know what I am referring too but they know I mean business.

Those people took what the bible say literally spare the rod and spoil the child, my grandmother would beat you with any thing that was close to her hand. She was something else. The Netherlands! you went far away from home. I am hoping to do a bit more traveling as soon as things clear up, maybe I'll visit you over there. Let me know how your cou cou comes out. U can put the cou cou with the gravy in a plastic container and freeze it for months. When ur ready for it just defrost and heat in the microwave. Tastes like new. Lol

Shaun when I was younger and I visited Barbados they made a drink of Guinness, milk, eggs and vanilla extract. They also added some seeds to it, however I can't remember the name of the seeds

What a blast thanks for doing this but how can you memorialize the cou-cou stick and not tell the folks what else " mom" would use it for ? When mom said bring the cou-cou stick and it was not meal prep day you knew you were going to get some blows! Lol!. The cou_cou stick however has been retired or at least in these parts my wife now uses a blender its fast,effective and you do not even break into a sweat; and yes for plating do use a plastic bowl to shape your creation and make your volcano with a central hole to capture all that gravy. Finish off the plate with sliced cucumber and sweet potato. Forever Bajan!

Hi Clem, you are so right about that cou cou stick lol! when your mom got mad and she said go bring the cou cou stick you start crying cause you know she was not about to stir no cou cou.😂 Yes the blender is much faster, it makes the meal nice and smooth and you add a nice gravy and as you said a piece of sweet potato and some cucumber, Oh so good. I couldn't see the cornmeal go into the bowl! I've been washing all cans, bottles etc for years you're right rats run around these warehouse passing urine.. I know that for a fact.. You can buy the cou cou stick on your next visit to Barbados😊When was your last visit?

Hi A&J , I find a blender works just as well and take away all that extra muscle work. My last visit to Barbados was about 3 years ago. I’m waiting for the virus to go away before I start traveling again. Thanks for watching

The reason I threw it away, is because of the sodium, lots of salt is added to can foods to help prolong shelf life,

I hated this as a child, I think mostly because of the okras, still don’t like okra so I just use the liquid to stir my meal and yeah I use a mixer to stir it, ain’t letting that break my boney hands.
