Ingredients
Dough : 600g White Flour
150g Powdered Sugar
200g Unsalted Butter ( melted )
3 Egg Yolks
200g Soured Cream
Orange zest from 1 Orange
1tsp Baking Powder
A pinch of Salt
1-2tsp Vanilla Extract

Filling : 200g Plum Jam
150g Ground Walnuts

Topping : 150g Powdered Sugar mixed with vanilla sugar

In a bowl , add egg yolks, sour cream, powdered sugar, melted butter orange zest , a pinch of salt and 1-2 teaspoons of vanilla extract. Mix everything really well using a whisk. Add the baking powder and the flour gradually .Out of the 600g of flour , save about 50g for later for kneading the dough on the table .
Once you obtain a dough that's quite dense , take it out onto the table and knead for 1-2 minutes . Then cover the dough in cling film and refrigerate it for 30 minutes , or freeze for 15 minutes. In the meantime , mix the plum jam and the ground walnuts. Then take the dough out of the fridge and divide it into 3 pieces . Use one piece and refrigerate the other two.
Roll the dough out into a circular shape ( 2-3millimeters thickness ) and cut it into triangular lines . Use the jam and walnuts mixture to fill each piece then roll it so you get a mini croissant. Do the same with the rest of the dough , then place the mini croissants on a tray and bake for 15-20 minutes on 180degreesC , or until you can see that the mini croissants are slightly golden brown on top.
Take them out of the oven and roll them in powdered sugar straight away ( you need to do this while the mini croissants are still hot otherwise the powdered sugar won't stick to them ) . Enjoy !
