Cottage cheese flatbread is all over social media.
Cottage cheese is loaded with protein and as a flatbread it is perfect. Just stuff it with your favourite ingredients and it makes a perfect lunch loaded with protein. It is high in sodium though so try to buy a low sodium cottage cheese.
Saying that, I am not knocking a good wrap made with whole grains and fibre, this is just a fun alternative.
NOTE: put it on parchment paper and do not let the ends brown or it will over cook.
* 1 cup Cottage Cheese
* 2 eggs
* seasoning of choice
Preheat oven to 350F/180c and line a baking sheet with parchment paper and spray with cooking spray.
Into the bowl of a blender, add in 1 cup cottage cheese, 2 eggs, and seasoning. Blend until smooth.
Pour the mixture onto the baking sheet and allow it to spread out. Bake in oven for 40 minutes and then allow to fully cool! This is a crucial step that can't be skipped or your wrap will fall apart!
