Turkish Style Couscous Salad
I really enjoyed this salad recipe, it's really nice. I bring it to work, having it for my lunch, topped with grilled chicken.
Ingredients:
1 ½ cup dried couscous
1 tsp cumin
1 heaped tsp smoked paprika
A pinch of salt and pepper
1-2 tbsp olive oil
1 ½ cup boiling water
1 tbsp minced garlic
1-2 tbsp tomato puree
Some olive oil
Fresh Ingredients:
2 large seeded and finely chopped tomatoes
3 baby finely chopped cucumbers
1 Finely chopped red onion
1 Finely chopped red pepper
A bunch of finely chopped parsley
Some finely chopped fresh mint
Method:
1. Measure 1 ½ cup dried couscous and put it in a pot or large bowl
2. Add in the cumin, smoked paprika, a pinch of salt and pepper, olive oil and hot water. Give it a mix. Cover and leave it to rest for 10 mins.
3. Meanwhile, finely chop about 1 tbsp of garlic and mix it with tomato puree and some olive oil.
4. After 10 mins, the couscous should be ready! Using a fork, try to separate them until there’s no lump of couscous.
5. Add the tomato puree mixture to the couscous. Mix until well incorporated. Set Aside.
6. Chop and cut all the fresh ingredients and add them to the couscous.
7. Serve with lemon and olive oil dressing.
8. Enjoy!
