Cowboy Baked Beans!
• Cowboy Baked Beans
Thank y’all for stopping by! Don’t you hate it when someone serves you beans right our of the can?! Now I’m not against canned at all, but you got to give them a little more love to make it good. We’re showing you our recipe for cowboy baked beans using chili beans and pork and beans for the base along with some chipotle peppers to spice it up. Stick around for this classic baked bean recipe.
Enjoy the video and leave questions or comments below.
Cowboy Baked Beans
Makes about 10- 12 servings.
6 slices, thick cut bacon
1 (26 oz) can Ranch Style or Chili Beans
1 (28 oz) can Pork ‘n Beans
1 (7 oz.) can chipotle peppers in adobo sauce, chopped
1 medium yellow onion, chopped
1 - 1 ½ tablespoons yellow mustard
1 ½ - 2 cups light brown sugar
1/2-1 cup BBQ sauce
1. Cut the bacon into 1-inch pieces. Add to a skillet and cook over medium-high heat until about ¾ done. Set aside.
2. Using a colander, drain the juices from the beans. Add to a 12-inch Dutch oven.
3. Stir in the chipotle peppers, to taste. Stir in the onion, mustard and brown sugar and BBQ. Adjust taste, if needed.
4. Cook over coals until the mixture reaches a boil, let simmer a few additional minutes and the mixture thickens just slightly. Serve warm with a slotted spoon.
Note: If cooking in the house use an 11x13-inch casserole dish. Cook at 350 degrees F. for about 30 - 40 minutes.

WARNING do not do what I did with this recipe. My stepkids came over for a birthday dinner the other night with their significant others. I made these again, but doubled the bacon. Now they are talking about moving back home.

I still make baked beans using my grandmother’s recipe which is nearly identical to this with the exception of the bbq sauce. Instead of bbq sauce, I use molasses and some chunked or crushed pineapple and juice for that sweet and tang to go with the chilis. Now I’m going to have to go see if I have all the ingredients on hand to make it!

Wow! Reminds me of my childhood. When our elders cooked on wood & coals outside the house at festivals & special occasions. Slaughtering a goat or sheep and always the regular few chicken were on the menu. I never really got to enjoying the food because when you're a kid, food is an interruption to all the fun you were supposed to be having. Because now you have to sit & finish your meals. I'm from India & I love Mr Rollin's videos & his dance moves. Wish I was as joyful as he is all the time. 💜GB

Hi Kent! I love your channel, because it reminds me of all the great times I had growing up with my Dad in the wild, God's beautiful outdoors! I grew up with my Dad backpacking, mountain climbing, primitive camping, and sailing on the Great Lakes and oceans. We always learned to eat what ever we could find that was indigenous to the areas, along with whatever we brought with us. Dry pinto, kidney, and Navy beans were always a main staple for us, and we would cook them over the fire, and serve them with what ever meat we had, and wild greens or other plants we would find. We often carried home made venison and beef jerky, freeze dried pork chops (that could be reconstituted with water when cooking), sausages that didn't need refrigeration....etc, as well as catching fresh mountain trout or crawdads, and redfish, grouper, and stone crabs from the ocean. We also gathered and ate local dandelion greens, clover, day lilies, wild onions, cattails, swamp potatoes, berries, apples, fried cactus in the desert areas, chicory, mushrooms, walnuts, hickory nuts, and pine nuts (that we would roast on a fire), sarsaparilla roots for hot tea, and mint leaves for refreshing cool drinks. I am much older now, and a diabetic, though I am becoming good at cooking and baking good foods that keep me healthy, and are satisfying. These Cowboy Beans look GREAT, though I would have to make them from scratch, using much less sugar. If I started with dry beans, what type of beans should I use, and should I soak them over night, or just cook them over the fire? I have become pretty good at making "substitutes" for BBQ sauce, using tomato sauce, Swerve Brown Sugar (a great no carb brown sugar made of natural ingredients for diabetics), onions, and other spices. Thank you!!

I must add, these beans are truly a winner. I used 50% more chipotles in adobo, a bit more onion which I first sauteed in a bit of bacon grease and a bit less brown sugar (I used what I had on hand) and the results were amazing. Thanks, Kent and Shan!

Its a good day above the grass, but as a plumber I spent the majority of the day 12 feet under running pipe. A meal like this with a little of my extra special black rose hot sauce from the pepper palace completely made my day. Thanks for the first time, and im sure I will thank you again in the future. I have a chili cook off coming up this fall and I would love a great recipe to make some great chili to take in and make sure the rest of the crew knows that I mean business.

say now! Ain't no foul in cuttin open a can of Ranch Style beans, adding some sweet onion and cookin em in the can when you're out away from civilization! I just cooked up some chicken fried steak & buttery garlic potatoes over a fire for my brothers birthday and the Ranch Style beans rounded out the meal just fine but you just give me an idea for next time. Great video ws always Kent (and crew)

Mr Rollins...you are the man! Bought myself a dutch oven just because of this video, made these beans last night (jalapeños instead of Chipotle peppers, as I couldn't find them in the UK) who knew beans could taste so good! Cheers 👍
