Amba sauce:
2 tbsp ground fenugreek
1 tbsp turmeric
1 1/2 tsp mustard powder
1 1/2 tsp ground coriander
1 1/2tsp salt
1 tsp citric acid
1/2 tsp black pepper
1/2 tsp cayenne pepper
500ml water
50-100g mango pickle
Tikka:
1.5 tsp salt
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp sumac
1 tsp turmeric
3/4 tsp white pepper
1/2 tsp citric acid
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/4 tsp ground ginger
50g ketchup
15g tomato paste
30g olive oil
2 tbsp amba (or replace with american mustard)
1kg Chicken Breast

This recipe is very similar to how we marinade skewers in Lithuania too. Always funny seeing how cultures this far apart end up converging on such similar dishes.

Amba sauce was a bit of a revelation when I discovered it a few years back. One of my most main used condiments on sandwiches, wraps or just on the side of the plate.

Oh boy, I love the sound of this! I think I'll look for this sauce next time we're at the Asian market and if it's something we like, I'll try making it. I do like a sharp, tangy, spicy sauce, so sounds right up my alley!

Could you do a series on different types of olives, how to spot good quality olive oil and different ways to incooperate olives into a meal..great videos. Hands down the egyption fava bean falafel is the best! sent me back to the time i visited my egyption friends in Fayoum !!! This is coming from a kashmiri so therre no bias here lol😂 x great work on this channel. excited to try each receipe. So easily to follow

Be careful of the mango pickle you buy when making this. The one I bought has 1479mg sodium per 30g serving, and the chicken was too salty. With extra amba, it was WAY too salty. When I make it again, I think I won't add any extra salt except for whatever is in the mango pickle to begin with, or buy different mango pickle with less salt in it.

Made it today and it was just amazing. I will make it asap again! Word of caution. Some mango pickles have the pit in them. So watch for that. Otherwise this is quickly becoming one of the best things I’ve made so far.

See this is why the whole world should get on and stop fighting ....... How do I find Iraqis in the UK, I want them to be my new friends 😂😋👍👍 Also may interest you, I was like this when I went to Nepal (my first ever time out of the UK at 49). I stayed at a retired Gurkhas house in Kathmandu with him and his family. His wife and mother in law cooked and I was in awe daily of the amazing food I was eating. Trying to be a good white guy I already started learning as much language as I couild, the look on his wifes mums face when I told her in Nepali her food was great was priceless 🥰😋 They looked after me so well, bif respect for Asian countries but I bet all these other places the people are as nice too.

We have a sizeable Iraqi Kurdish community here in Nashville, Tennessee. So Ive actually had the mango ketchup sauce before and yes, it is quite an acquired taste 😳 Bitter like bile but also fruity too.

Because I'm a weirdo with a broke brain and eardrums ruined by years of playing with power tools, loud cars, and boomsticks, the sauce is "Amba", and it's spelled just like it sounds. I'm definitely making it next paycheck. I hope that this is helpful to anyone curious. Be excellent, friends.

The Wikipedia page about Amba states, "According to the legend, Amba was developed in the 19th century by members of the Sassoon family of Bombay, India, who were Baghdadi Jews." In Israel today, at falafel and shawarma stands, the Amba bottle is always present next to the tahini bottle. I love eating Shawarma at the Bedouin city of Rahat where they mix the Amba with the meat on the plancha before putting it in the pita. (And please don't shout at me about Israel and war. Believe me I am on your side.)

made both , the kerbabs are very nice , interesting flavour..but the sauce, was oh so powerful....i dont know if it was the amba pickles jar[that already had many of the spices we add to make the sauce] that made it near impossible to eat....added some tandori favouring just to tone it down abit...to make it managable [winks] :P

Yeah amba is supposed to be strong, maybe the pickles were very spiced. If it's too strong you can dilute it with more water.

The Indian pickle I have at home doesn’t look at all like what you show in the video. I use Mother’s brand. What is the brand you are using for the recipe? It looks more like a chutney to me, or like a British pickle. I would like to make sure I get the flavor profile right!

Amba is a strong powerful tasting sauce, just like English mustard is. I'd say it's more rounded than the pickles, but it does have a sharp flavour, so if you enjoy strong sharp sauces you'll love this!

I don't think it would thicken the same way. The seeds are a natural thickener.
