This has got to be my favorite because I bake muffins a lot more often than cookies or bread. These basic recipes are so great and convenient, one recipe to build from and the possibilities are endless. You make baking easy for so many people that aren't so adventurous in that department in the kitchen.
Thank you for sharing this recipe. I made this today and it turned out really good and not overly sweet. I even used your buttermilk substitute. The flavors I used are cheese, chocolate, corn, banana, strawberry and dates with almonds.

I made this twice and they're so good. I tweaked the salt and sugar amount for the 2nd round to make savoury muffins. I love the texture of these muffins. Thanks for this recipe, Gemma.

These are fantastic....made 3 varieties blueberry, chocolate chunk with orange zest and chocolate chip swirled with peanut butter....all were amazing!!!
Tip for people who have mini muffin mould - I baked carrot and choco chip muffins. In the batter given on the website for 6 muffins, I got 20 mini muffins. Tips are: 1. Bake for 15 mins not 25 mins to keep them soft as size is small. In 25 mins the exterior became hard and crumbly but interior was soft. In 15 both were soft. 2. The batter makes 20 mini muffins for a batter of 6 muffins so adjust the batter accordingly. Thanks Gemma for the amazing recipe!
Just finished making these as a snack for our son for school tomorrow. He is taking a plain vanilla muffin, but I made raspberry ones for my husband and I. This is such an easy recipe to follow. Thank you as always Gemma!
I finally got around to making these today. I wasn't feeling too adventurous, so I only added some chocolate chips, but they came out with a lovely toasted top, and oh so soft in the middle. It's a wonderful recipe.
Just excellent...perfect rise on xl muffins, added a few baking minutes for the big ones, added extra banana, milk plus vinegar for buttermilk substitute and some pumpkin puree for egg substitute. Hello from SK Canada.

I watched this clip last night and I am back here to put my thumb up. This is the first time success muffin recipe for me. It is a really recipe from scratch so you do not have to have much baking skills at all. Just remember about 'do not over mix it' that is enough to get a really good muffins out of your oven. I made mine with chocolate one, mulberry jam and mango one. Thank you so much Gemma for this recipe ❤️

Had last minute visitors this morning and made up 10 of these muffins (Maple and Pecan) - delicious. My new 'go to' recipe. Thank you Gemma for making ALL your baking look so easy that we just have to try them. BTW, muffins were a hit. xx :D
Tried them with raspberry and white chocolate, Yummm. Thank you for putting the weights in your recipes as well as quantities. I think using weights is the only way to get consistency in baking.
