Its because the airlines don't want people thinking their airlines aren't safe, and a video going viral of a girl freaking out because she thinks the plane gonna crash, is the type of thing these airline companies will aggressively try to shut down, whether the viral video actually proves anything or not is irrelevant, and so is the meltdown... She likely "can't speak for legal reasons" because she has been threatened by the airlines that she will be aggressively sued if she doesn't shut up, whether she's right or wrong doesn't matter.

When she was on the phone with her sister, she said "I dont think that plane is going to make it to its destination". Not only that but even on the origibal plane video She mentions the possibility of everyone dying on the plane and she said she wasn't gonna let that happen to her so she wants off. Only sort of mental breakdown that could cause a fearful outburst like that is if she was experiencing symptoms of psychosis or drug induced psychosis. It was a fearful meltdown, not an angry one so her explanation about airpods being stollen make no sense.
