A classy luncheon or supper dish. I used canned chicken for this recipe, but home-cooked chicken (or canned tuna, crab, or even lobster) will work as well. Thank you for watching! Ingredients are listed below.
Creamed Chicken on Puff Pastry
Puff pastry shells*
2 tablespoons butter
1-2 tablespoons diced onion
2 tablespoons flour
2 cups half-and-half (or milk, or stock)
Salt and pepper to taste
Garlic powder to taste
Onion powder to taste
1/2 to 1 teaspoon dried tarragon leaves
1 bag (about 3 cups) frozen peas and carrots, thawed and cooked
1 (10-ounce) can chicken breast meat
Garnish: Fresh, minced parsley
*Feel free to use puff pastry sheets instead of the little shells. Cut the sheets into 4 squares or 6 rectangles. After baking, split the pieces horizontally in half. Spoon the creamed chicken mixture onto one half, and place the other half on top.
