I greatly appreciate how you regularly reiterate that we should adapt your recipes to suit our individual tastes, it helps take away the fear of messing up when experimenting. . I'm a big experimenter, but I've only ruined a couple of things over many years, even mistakes tend to be fully edible :D
Oh this so my kind of cooking! This is why I much prefer home cooking to restaurant cooking; you can just do what you want at your own pace, you answer only to yourself.

I used pancetta instead of bacon. I didn't have mozzarella so I only made it with parmesan, but it came out great! Also, I tried it with half a tsp of korean chili powder but I didn't taste it. Next time I'll add more. Thanks for this recipe. My family loved it!

Bacon. Bacon! BACON!!! I wish you had posted this sooner. I made garlic butter zoodles Friday and now I want to make them with this recipe. My mouth is seriously watering. (For those that haven’t heard the term Zoodles, they’re just zucchini ribbons or spirals. Low carb option depending on your toppings.)
I often used Korean red pepper powder with chopped green onions and aged for a day with fresh cream. It will definitely taste really good. Thanks for the delicious recipe, I'll make it tomorrow night!

I came across your video and i was quite skeptical at first, using evaporated milk instead of cooking cream. But i dont have enough cooking cream, so i ended up using half evaporated and half cream! The result is amazing !!! Taste like expensive pasta in high end resturants🤣 thank you for the video!!
I just made home made Mac and Cheese last night. I do Love the DeCecco pasta. It's so fresh. This is excellent information. I don't use bacon grease... But I can understand why it would be so good. Thank You for a great video.

Oh my gosh, that looks amazing! I’ve never used evaporated milk for cheese sauce; I always start with a béchamel sauce and add my cheese of choice. I just might have to try this. After all, everything is better with bacon!

We only use turkey bacon so I really didn't have any bacon fat to use so I used butter and added a teaspoon of chicken bouillon, it was delicious. This one is going into our dinner rotation 👍
Very delicious looking. I would have skipped the step of wiping out the pan, so I wouldn't waste the bacon-y goodness left behind. There wasn't that much fat left anyway, and then adding the 2TBS wouldn't have made that much difference. I like the fond that accumulates on the bottom of a skillet after frying or sauteing the protein. Great recipe Mama!

At the end the sauce was very lumpy and looked like cottage cheese - it was not smooth at all. What did we do wrong? Thanks for any insight! We used same exact ingredients bu t did double the recipe.

I’m going to try this one. I made carbonara last week my daughter said it was dry . And I got the recipe on RU-vid I’ve learned now that I may have to double the cream sauce recipe because what they show is obviously not enough for a pound of pasta.
Does that sauce go hard and stuck to the noodles when its cold? I find that happenes when i add cheese to the sauce, i would like that cheesy taste but i dont want the sauce to be stuck when cold

what difference does condensed milk have from heavy cream? ive used heavy cream before and it seemed very creamy with the cheese i used aswell. but im up for any cheaper options cuz im broke

We always kept a coffee can with bacon grease under the kitchen sink-heaven help the person that went to make cornbread and the can was empty! lol I do like canned cow (evaporated milk) in my cheese sauces. Could you use that Mexican crema in a cheese sauce?

You definitely can use Mexican crema in cheese sauces. I literally make cheese sauce 10 different ways depending on what I have in my fridge...lol!
