Creamy Chocolate Cheesecake - Irresistible Dessert Delight! This creamy chocolate cheesecake is a dream come true for chocolate lovers. It has a crunchy cookie crust, a creamy chocolate filling. It’s easy to make, but you’ll need to plan ahead as it requires some chilling time in the fridge. This cheesecake is perfect for any occasion, whether it’s a birthday, a holiday, or just a treat for yourself.
Ingredients:
140 g cookies
80 g butter
680 g cream cheese
200 g sugar, add in portions
pinch salt
175 g sour cream
30 g cocoa powder
2 tsp. vanilla extract
225 g chocolate
3 eggs
The steps are:
Preheat oven to 175°C (347°F). Grind the cookies into crumbs using a food processor or a rolling pin. Combine cookie crumbs and melted butter in a bowl and mix well.
Place the crumb mixture in a 22 centimeter (9 inch) springform pan. Press it firmly into the bottom and make rims up 2.5 centimeters (1 inch) on the sides. Bake for 10 minutes or until lightly golden. Let it cool completely on a wire rack.
Melt the chocolate in a microwave-safe bowl, stirring every 15 seconds, until smooth. Let it cool slightly.
Place the cream cheese in a large bowl and beat on medium speed with an electric mixer until fluffy, about 3 minutes. Gradually add the sugar, beating well after each addition. Add the salt, sour cream, cocoa powder, vanilla extract, and melted chocolate. Beat until well combined, scraping the sides of the bowl as needed.
Add the eggs, one at a time, beating just until blended after each addition. Do not overmix.
Pour the cream cheese filling over the cooled cookie crust and spread it evenly.
Bake at 150°C (302°F) for 50 to 60 minutes or until the center is almost set. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 10 minutes. Then transfer it to a wire rack and let it cool completely.
Refrigerate the cheesecake, uncovered, for at least 6 hours or overnight.
To serve, run a knife around the edge of the pan and remove the sides. Cut into slices and enjoy!
