Ingredients:
1 cup boneless chicken pieces
2 tbsp butter
Salt and pepper to taste
1 cup diced pumpkin
1 sliced onion
2 cloves chopped garlic
1 green chili, chopped
1 cup chopped tomatoes
1 cup milk (plus extra for blending)
1 cup chopped carrots
1 tsp mixed Italian herbs
Fresh basil, chopped
1 cup boiled whole wheat pasta
¼ cup cheddar cheese
¼ cup mozzarella cheese
½ cup tomato sauce
Instructions:
1.Stir-fry the chicken pieces with 1 tbsp butter, salt, and pepper until cooked.
2.Set aside.
3.In the same pan, cook pumpkin, onion, garlic, green chili, and tomatoes with salt g, and salt to taste.
8.Combine with boiled whole wheat pasta, cheddar and mozzarella cheese, and tomato sauce.
9.Mix well and serve.
