Crepe cake with berries🥞🍒
🍒Berry filling:
150 g strawberries (1/3 lb)
100 g cherries (3.6 oz)
100 g currants (3.6 oz)
50 g sugar (1.8 oz)
25 g cornstarch (1 oz)
50 ml water (1.6 fl.oz)
🍒Prepare the berry filling.
1. Put the strawberries, cherries, currants and sugar in a saucepan.
2. Combine the starch with cold water, add to the berries, stir.
3. Put on medium heat, cook the puree with constant stirring, bring to a boil. Boil for 1 minute.
4. Cover the finished filling with cling film and let cool.
🥞Blind dough:
250 g eggs (5 eggs)
600 ml milk (20 fl.oz)
220 g flour (7 oz)
60 g sugar (2 oz)
1/3 tsp. salt
40 ml vegetable oil (1.3 fl.oz)
🥞Prepare the pancakes.
1. Mix the eggs with the sugar, add 1/2 part of the milk and the flour. Beat with a blender until smooth.
2. Add the remaining milk and mix again.
3. Add the butter and stir to combine.
4. Fry the pancakes.
😋Cream curd:
300 g sour cream (10.7 oz, 25-30% fat content)
250 g curd (9 oz, 5-9% fat).
250 ml cream (8 fl.oz, fat 30%)
50 g powdered sugar (1.8 oz)
😋Prepare the custard cream.
1. Combine the cottage cheese, sour cream, cream and powdered sugar, mix.
2. Whisk until smooth.
3. Beat in a food processor until fluffy.
4. Transfer 2/3 of the cream to a piping bag.
🥞Assemble the cake.
1. Take a 22 cm diameter bottomless cake tin, place 8 pancakes on the sides of the tin along its diameter, overlapping each other.
2. Take the pancake, brush it with the berry filling, spread the cottage cheese cream on top and wrap. Wrap 3 more of these pancakes.
3. Place the pancake on the bottom of the mold, spread the remaining 1/3 of the cottage cheese cream on it, lifting the cream up the walls.
4. Lay out the prepared wrapped pancakes.
5. Cream the pancakes on top, filling the voids, cover the top with the pancake and cream again.
6. Wrap 4 more pancakes, lay them out in the mold, smear the cream and cover with the pancakes laid out on the sides of the mold.
7. Cover the cake with clingfilm and put it in the fridge for 4-5 hours.

🍒Decorate the dessert.
1. Remove the mold from the pancake cake.
2. Place berries on top of the cake and sprinkle with powdered sugar.
