Same here. I use the same frying pan in cooking my eggs. My technique is to heat the pan, really hot then pour the oil. Oil should remain lukewarm. Add the eggs next not letting the oil to accumulate heat.

I'm based here in NYCity and i cook a lot of Filipino dishes for friends and also co-workers, they go crazy whenever they taste Filipino food. LOL. They love it. I make adobo flakes from leftover rotisserie chicken breast. Ayaw kasi ng family ko ung breast, so i made a new meal from that leftover.. walang sayang! They loved it!❤
