Title: How to Make Chicken Croquettes: Easy and Delicious Recipe
Ingredients:
250g of boiled shredded chicken
1/4 cup of julienne Capsicum
1/4 cup of chopped Spring onions
1/4 cup of chopped carrots
3 cloves of grated garlic
2 tablespoons of butter
4 tablespoons of plain flour
1 and 1/2 teaspoons of salt
1 teaspoon of black pepper
1/2 cup of cheddar cheese
1/2 cup of mozzarella cheese
1/2 cup of chicken stock
1/2 cup of milk
For Coating: 1/2 cup of plain flour, 2 beaten eggs, 2 cups of panko bread crumbs
Instructions:
In a pan, melt 2 tablespoons of butter and add 3 cloves of grated garlic. Fry for one minute.
Add 1/4 cup each of capsicum, spring onion, and carrots. Saute for 2 minutes.
Add 4 tablespoons of plain flour and roast for 4-5 minutes.
Add 1/2 cup of chicken stock and mix well.
Add 1/2 cup of milk and mix well until no lumps are formed.
Add 1 and 1/2 teaspoons of salt and 1 teaspoon of black pepper. Mix well until a tight dough is formed.
Add shredded boiled chicken and mix well.
Add 1/2 cup each of mozzarella and cheddar cheese. Mix until all ingredients are combined.
Let the mixture cool down and shape them into rolls.
Set up a coating station: first, dip the rolls into plain flour, then roll in beaten egg, and finally roll them in bread crumbs.
Fry them right away or freeze them. When needed, heat oil at medium-high heat and fry frozen chicken croquettes until golden brown for 4 minutes.
