Snack, snacks, snacks. I love snacks! The crispy eggplant roll ups are the ultimate tasty treat for family and friends. I served them up at my last party and they were devoured in minutes. The great thing is, they can be made up in about 30 minutes with a few simple ingredients. Lately, that seems to be the trend here at Cook n' Share.
All you will need is eggplant, ground pork, some seasoning, and you are off the the races. I always serve mine up with sweet chilli sauce, but it's your call.

Dave, folks who buy or garden grow eggplants, been watching recipes on eggplant recipes last few years, according to the network food show chefs & local chefs here the best are( they were right as we tried all 3 of these) from top 3, # 1 are Sicilian eggplants( appx. 2/3 rds. the size of next 2) , thin skin, least seeds/bitterness, # 2 Italian eggplant a little more seeds/bitterness but larger whole eggplant, # 3 California eggplant, similar in size to the Italian eggplant & taste slightly more bitter. If you want the best seasoned flour, I know Walmart stocks this, look for Kentucky Kernel( spelled that way) seasoned flour & only comes in a red/white checkered box, no bag, will be in flour or breading section, best you will eat & also great on pork or chicken, I use nothing else. I hope that helps folks

Dave my friend, outstanding recipe, yes on us & the girls & we grew them in our garden last year & everyone liked, will again this year,( we are looking to move to new house for more acreage for a larger garden or we will look for a share cropper place) this can be a whole meal if enough are made & are a great budget meal, to fill up even more, some bowtie/rotini anti- pasta on the side with maybe Italian green beans, delicious, 1 more post coming re: eggplant & breading idea, keep your stick on the ice pal

This is fantastic, it looks so yummy, easy and fun to make! My partner isn’t a fan of pork or eggplant, I’ll make this for myself and the lads, then substitute green squash and ground turkey for missus! Thanks for the early morning joy!

@@TheCooknShare David, have you ever tried snacks produced by the Indians here in South Africa? They are also prepared by the Cape Malay folk in Cape Town. The Indians in Durban call them "Chili Bites" & the Cape Malay folk call them Daltjies. You are so adept at making recipes simple & I was thinking what great value you could add, by running us through the prep of these delicious snacks, with your superb communication skills.
