Ingredients
1/2 kg white bait
1 tbsp salt
1/2 cup plain flour
1/2 cup cornflour
1/2 tsp black pepper
1 tsp garlic powder
Oil for frying
Garlic Aioli
1 cup whole egg mayonnaise
1 tsp dijo mustard
5 cloves garlic, crushed
Juice of half a lemon
Method
Prepare Garlic Aioli by combine all ingredients & mix well. Set aside for serving.
Wash white bait & heat for frying to 190ºC
In a large bowl sift together flour, salt, pepper & garlic powder.
Toss white bait in flour mixture to cover. A handful at a time, remove excess flour & submerge in oil. Fry for about 3 - 4 minutes until golden brown & crispy. Add a sprinkle of salt & serve with aioli & lemon slices.
