INGREDIENTS
1 lb (455 g) chicken breast or thigh meat
Vegetable oil (for deep-frying)
Marinade
2 tbsp soy sauce
2 tbsp Shaoxing wine
1 tbsp cornstarch
1 tsp white pepper
Batter
½ cup cornstarch
2 egg whites
1 tablespoon vegetable oil
1 cup (120 g) cornstarch for dredging
Lemon sauce
3/4 cup (178 ml) water
1/2 cup (120 ml) lemon juice
2 tbsp rice vinegar
2 tbsp soy sauce
2 tbsp cornstarch
½ cup sugar
½ tsp salt
2 teaspoons lemon zest
