Pan Seared Pork Chop on a Cast Iron Skillet
1.26 lbs. Duroc Pork Chop, Bone In (2 ¼ inch thick)
1 teaspoon Johnny’s seasoning salt
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons butter (unsalted)
2 cloves garlic (minced)
¼ cup vegetable stock
3 sprigs fresh thyme
2 sprigs fresh rosemary
2 tablespoons olive oil
Directions:
Pat the Pork Chop dry.
Season all sides of the Pork Chop generously.
Over medium/high heat, add olive oil to cast iron skillet.
Sear the flat sides of the Pork Chop for just around 2 minutes.
Flip and sear the fatty sides as well. Remove from the cast iron skillet and set aside.
Add the garlic, vegetable stock, herbs and butter to the cast iron skillet, allow to simmer.
Add the Pork Chop back to the cast iron skillet and baste.
Place in the oven and bake at 350 degrees F for 20 - 22 minutes, or until the internal temperature of the Pork Chop reaches 145 degrees F.
Remove the Pork Chop from the oven and cast-iron skillet and allow to rest for 5 - 7 minutes.
Carve and Serve with your favorite sides & vegetables!
