Ingredients of Vegetable Samosa:
For the Outer Layer (Pastry):
All-purpose Flour/Maida - 1 cup (250g.)
Ajwain (Carrom Seeds) - 1 pinch (optional)
Salt - ½ tsp
Cooking Oil - 4 tbsp (60 ml.)
Water - ¼ cup/60 ml (approx.)
For the vegetable filling:
Cooking Oil - 1 ½ tbsp.
Mixed Vegetables (chopped carrots, green beans, peas, sweet corn, green bell pepper/capsicum)- 1 ½ cup
Finely Chopped Onions - ½ cup
Boiled peeled and mashed Potato - ½ cup
Garlic - 3 large cloves
Ginger - ½ inch piece
Coriander leaves - ¼ cup
Green chilli - 1 no.
Spices - ½ tsp. cumin seeds, ½ tsp. turmeric powder, 1 tsp. red chilli powder, 1 tsp. coriander powder, 1 tsp. garam masala powder,
Optional spices - ½ tsp. crushed fennel seeds (saunf), ½ tsp. dry mango powder (amchur), ½ tsp. chaat masala powder
Salt to taste
Cooking Oil for deep-frying
