Ingredients:
• 4 boneless, skinless chicken breasts
• 1 jar (16 oz) salsa (your preferred flavor)
• 1 can (15 oz) black beans, drained and rinsed
• 1 can (15 oz) corn, drained
• 1 teaspoon salt
• 1 tablespoon minced garlic
• 1 teaspoon pepper
• Cooked rice, for serving
Instructions:
1. Prepare the Ingredients:
• Place the chicken breasts in the bottom of your crockpot.
• Pour the salsa over the chicken, ensuring it is well coated.
• Add the black beans, corn, minced garlic, salt, and pepper. Stir the mixture slightly to distribute the ingredients evenly.
2. Cook:
• Low and Slow: Cover the crockpot and cook on low for 7-8 hours.
• Quick and High: Alternatively, cook on high for 4-5 hours.
3. Shred the Chicken:
• Once the chicken is tender, use two forks to shred it directly in the crockpot, mixing it with the salsa, beans, and corn.
4. Serve:
• Spoon the chicken mixture over cooked rice and enjoy!
Tips:
• For a spicier dish, use a medium or hot salsa.
• Add a squeeze of lime juice and a sprinkle of fresh cilantro before serving for extra flavor.
