Cua Rang Muoi (Vietnamese Salt & Pepper Crab) with Garlic Noodles

Indulge yourself with this fabulous crab dinner! Here's the instructional video for Cua Rang Muoi and Garlic Noodles. You can use either fresh or precooked crab. I found these pre-cooked Dungeness Crabs at Costco. For the garlic noodles you can use whichever type of noodles you like. I used these fresh Korean noodles you'll see in the video. I like them because they are quick to cook and have a nice chewy texture.
Serves 2-3 people
Ingredients for cua rang muoi:
2 dungeness crabs (4 lbs total)
1 bunch of green onions
1 shallot
7 garlic cloves
1 jalapeno (optional)
1 egg
3/4 cup cornstarch
oil for frying
Crab seasoning:
1/2 tsp mushroom seasoning
1/4 tsp chicken stock powder
1/4 tsp sugar
1/4 tsp black pepper
1/2 tsp salt
Garlic noodles:
2 bundles of Korean fresh noodles
5 tbps minced garlic
2 tbsp soy sauce
2 tbps oyster sauce
oil for frying
Cua Rang Muoi Instructions:
1. Prepare crab seasoning by mixing all ingredients together. Set aside.
2. Cut green onions into quarters, finely mince shallots, garlic and slice jalapeno.
3. Chop crab (see video for demo). Save the crab fat (the yellow stuff) to be used later.
4. Beat 1 egg and pour over crabs then lightly coat the crabs with cornstarch.
5. In a wok/skillet heat up enough oil to deep fry. If there's not enough oil to deep fry then make sure you flip the crab to cook all sides. If using pre-cooked crabs like myself, cooking time is about 1 min per side. Fresh crabs should take a few minutes longer. Fry until the cornstarch is crispy and crabs turn red. Set fried crabs aside.
6. In a wok/skillet heat up about 1 tbsp of oil on high heat and toss in shallots, garlic, jalapeno slices and the crab fat. Cook for about 30 seconds then add in crabs, green onions and the seasoning. Toss it all together and cook until the green onions are soft. If your wok/skillet isn't large enough, cook in multiple batches.
Garlic Noodles Instructions:
1. Cook noodles per package instructions.
2. Fry 4 tbsp of minced garlic till golden brown and set aside.
3. In a wok/skillet heat up about 1-2 tbsp of oil and add 1 tbsp minced garlic.
4. Fry garlic until fragrant then add in noodles.
5. Add in soy and oyster sauce and toss noodles evenly.
6. Plate the noodles and dress it with the fried garlic bits.
7. Drizzle some Sriracha on the noodles for a spicy kick!
