When I was a kid I wouldn't eat anything. My next door neighbor who was Cuban, used to make this a few times a week. It was one of the only things I would eat. I used to knock on his door every time he made it because I could smell it. It got to the point that when he made it he would leave the door open with a note for me to come on in. I absolutely loved this stuff! My neighbor never had an issue with me showing up. He loved that I liked his cooking. He even started to make other Cuban dishes for me. Gosh I miss him. He was one of the kindest people I've ever known.

Yum! I substituted as I did not have the sofrito ~minced green pepper, minced celery and coriander , (no cilantro either). Actual large clove of garlic, minced. Everything else as per your recipe, and it is delish. Thanks for the recipe.

One of my coworkers was Cuban, and he made us a congri with just rice and a can of seasoned black beans. You just cook the beans and rice together with the liquid in the can, maybe only add a little bit more water. Delicious and so easy.

Going to Cuba was like going back in time. Many old classic beautiful cars. Cuba is a socialist/communist country and they have to give the government 49% of their salary. Can you imagine? Our tour guide said that she made more $ than the doctors and lawyers because of the tips from the tourist. Taxi drivers also make more $ than D and L. Interesting huh!
This yummy recipe looks like something that could be done "set it and forget it" style in a rice cooker. (The best method for us busy Mom's !) All ingredients into the pot, stir well, lid on, walk away !! Anybody done it that way ? Please reply

Hi Friend, I know it sounds strange that I used a one to one ratio. Typically, when making rice, it is a 2 to 1 ratio. 1 cup of rice, two cups of water. I noticed that more than one person who made rice, who was from Cuban, Puerto Rico or Dominican Republic, tended to use a one to one ratio. I honestly think that if you want to use a 2 to 1 ratio, it will still work.
Hi Friend, I am going to take back what I said. The black beans have liquid, so I think if you made this rice at a 2 to 1 ratio, like normal rice, it would be too much liquid. If you are using 5 cups of rice, use 5 cups of water. Remember, do not drain the liquid from the beans. Good luck!

Hi Jay, my pots are not fancy. I found this one at home goods. Honesty, I am in the middle of moving to another state. Literally I am moving this Sunday. All of my pots are boxed up. I usually use chicken broth for many recipes instead of water for even more flavor depth. Do you ever use chicken broth instead of water, or would that change the flavor too much?

Hi Sofia, I grew up thinking that rice was ALWAYS a 2 to 1 ratio, 2 c water 1 c rice, but there are different ways of making it. I have researched different ways. Cuban and Puerto Rican folks do make it using less water. Remember in the video after the 20 minutes of cook time, I said to let it sit there covered for 5 min. This allows it to steam for an extra 5 minutes continuing to cook. I urge you to try it my way. I think you will be surprised like I was.

Hi Friend, I have noticed that different cultures seem to make rice differently. I have seen some folks make it your way. I always learned to bring the rice to a boil, then lower the heat to a simmer, cover it and cook it on low heat for 20 min. I have made it your way. I think that it works both ways.
I love both red beans & rice and black beans & rice. The Cuban restaurant where I eat adds meat to theirs. And I always have to have their great Cuban sandwich with it. lol

Hi Barbara, you can find sofrito in the Hispanic section of most markets. It comes in a jar. If you use a little green bell pepper, onion, garlic and cilantro, and make it into a puree, you can get a similar flavor. just add a couple of tablespoons to this rice and it adds an incredible flavor. Sofrito is used in many Puerto Rican and Cuban dishes. They add it to chicken as well. I will give you two other videos for some reference. TFW

Hi Danorious, you just taught me something.. I did not know that there was an Italian sofito. I got into Caribbean cooking, that is when I learned of Sofrito using bell peppers, onions, culantro, cilantro and Ahi chili's. Many of these ingredients I had never heard of. Now you taught me that the Italians have something called Sofrito. Thank you for the schooling.
@@RosieCooks Italian sofrito is the basis for almost every italian risotto, soups and bolognese. Soffritto, is made of of onion, carrot and celery. I also heard for the first time that other places have a sofrito. it is written slightly different though, so we can differentiate.😄
