Hi!! Love this video. I am married to a Cuban and he loves this bread so much. I have made many recipes that stated they were Cuban Bread but basically they tasted like just your average French Bread. There is such a big difference between that and REAL Cuban Bread. I just saw your video and have no tried it yet, but I can tell with all of the attention paid to getting the most out of that yeast and making that starter, not to mention the addition of the Manteca. I will give it a try tomorrow and post a picture. Thanks for all you do, 🙋♀️

Your water should be between 110-115 degrees Fahrenheit. You can knead the flour for about 5 minutes if using a mixture becomes a ball & the dough doesn’t stick to the sides of bowl anymore.
Nice recipe. I’m a home bread baker and if you need a starter for a recipe, it doesn’t matter whether you use instant yeast or active dry yeast. It’s to get a jump on fermentation. When baking bread without a starter, active dry yeast needs to be proofed, not instant yeast. The purpose of a starter is to have pre fermented dough to add to the main dough, hence a starter.
