Could I age hams and sausages in a cave? I have property with a few caves. They stay about a constant 65° F , no insects or pest, and the humidity is the same as a normal comfortable home.
Yes it can be used for aging. We age at 85F so 65F would probably take longer to get the Aw down to .91 or 18% shrink from fresh weight. To get a really nice aged flavor I would target 20-25% shrink. If the Rh is above 65% the meat will mold. Just wipe off with vinegar and water before serving. - Sam Edwards III
