Curry Chickpeas with Eggplant is very delicious

This curry chickpeas also known as curry channa is a favorite of mine! I’ve taken the curry channa and aloo recipe and added eggplant to create a mouthwatering and addictive combination!

Ingredients -listed at 2:05
1 small eggplant (about 1 lb)
3 small potatoes (about 3/4 - 1 b)
2 packs or cans garbanzo beans (channa) (about 1 lb cooked)
1/2 small onion. sliced (and divided into 2)
4 - 6 tablespoons extra virgin olive oil or other cooking oil
1 1/2 - 2 tablespoons curry powder
6 cloves or garlic (or more or less)
2 scallions(green onions), chopped
4 large leaves culantro (also called bandhania or shado beni)
Himalayan salt (2 - 3 teaspoons)
Hot pepper, to taste, optional

It's vegan, vegetarian, filling and satisfying--and also cheap to make. With a little effort you can serve 8 or make enough for two or more meals for a family of 4. You can't go wrong!

I love cooking melongen🇹🇹Trini word for eggplant,my mother used to curry it with saltfish or beef.I haven eaten roasted with ochres 🇹🇹baked in a spicy tomato sauce.Ria you have given me another recipe to add to my growing list.by adding potatoes &channa to the mix.I can’t wait to try it and wash it down with a cold solo,and some kuchala on the side🤗🇹🇹👍🏽

Hi Ria, I am enjoying your recipes. My husband is from Penal, and I am American, we live in southern California. I have been learning how to cook different kinds of meals, and other foods from your country. I was also given the Naparima cook book from one of my In Laws; I love it. I want to try Buss up shut again, but a little nervous.. I didn't do good the first time.

Ria, is there a reason for not fully peeling the aubergine/egg plant?

If you use all the skin it might be overpowering and affect the final results. I like a nice balance but sometimes I pref it without the skin.
