Ingredients
1 cup (200 g) Dried lentils any variety
2 tbsp Vegetable oil
1 med Onion finely chopped
2 cloves Fresh Garlic minced
3 inch Fresh Ginger grated
2 tbsp Curry powder
½ tsp Garam masala
4 - 5 Curry leaves (optional)
½ tsp Cayenne pepper (Optional for heat)
2 tbsp Tomato paste
1 cup (240 ml) Vegetable broth or water
½ cup (120 ml) Coconut milk
½ tsp Salt to taste
2 tbsp Fresh cilantro coriander leaves
