Steps:
1. In a bowl: 80g heavy cream + 2 sachets of earl grey tea and microwave for 40sec (or brew on stove). Set aside.
2. In another bowl: microwave 120g of unsalted butter for 1 min (can be lumpy)
3. Add white chocolate + microwave again for 40 sec
4. Stir until chocolate is completely melted into butter
5. Add 30g condensed milk + pinch of salt into chocolate mixture
6. Keep batter warm (45-55C). Whisk the tea mixture into butter/chocolate mixture
7. Whisk in 3 egg yolks (put egg whites in a separate bowl)
8. Add 80g cake flour
9. Make the meringue: add 45g white sugar gradually in 3 batches and whisk the egg whites into stiff peaks. Whisk on low at the end to stabilize the meringue
10. Add meringue into the chocolate cake batter in 2 times. Hand whisk to blend
11. Pour into cake tin and bake at 165-170C for 40 minutes
12. Cool at room temp for 30 mins. Wrap and refrigerate for 5 hours
Earl Grey Cream (make ahead)
1. In a bowl: 50g cream + 1 sachet tea. Microwave or low heat on stove
2. Add 30g condensed milk + 150g heavy cream
3. Stir and refrigerate
Assemble:
1. Remove cake from tin
2. Remove the cream from fridge and whip immediately while cold until stiff peaks form
3. Frost cake
4. Refrigerate cake for 1 hour before serving
