Dairy-Free Coconut Crème Caramel ( Coconut Flan)

Finally a dairy-free dessert that tastes as good as all the others, rejoice!
But in all seriousness this dessert is really good. It's a simple play on the classic creme caramel but instead of using cow's milk I use coconut milk. Feel free and add shredding coconut in the custard or something crunchy on top for texture, fresh fruit adds nice color and contrast.
I find this recipe comes in handy especially for professional chefs who need a #dairy-free #vegetarian or #kosher dessert option. If you wanted it #vegan you would replace eggs with agar agar. A recipe will come in the future for that one. But for now the recipe in the video is down below. I made six 5oz ramekins.
Caramel-
1/2 cup sugar
1 Tablespoon light corn syrup
1 Tablespoon water
Boil until dark and pour in vessel/s.
Custard Base-
1 can (14oz) full fat coconut milk. I like using Thai coconut milk.
1/2 cup sugar
1 Teaspoon vanilla extract
3 whole eggs
1 egg yolk
Whisk eggs together
Combine coconut milk and sugar, bring to a simmer. Let cool
Mix together with eggs and vanilla
Bake in water bath, wrapped in 3 layers of plastic wrap at a low temperature. Not higher than 300 F for 35-45 minutes or until just barely set.
Let sit in water bath out of the oven until room temperature. Wrap and refrigerate overnight or until very cold.
When ready to eat dip the ramekin in hot water for a minute. Cut around with a thin knife. Invert and let slide out on plate.

I came up with this dessert while I was the chef of this small bistro in Brooklyn NY. I had guests who couldn't eat dairy but still wanted dessert. I doubt I'm the first one on earth who's made this dessert but for me it was an exciting choice for those who are lactose intolerant. I hope you and your family enjoy. Thanks for watching!

Oh yeah. It isn't as ideal as a lid but IMO it's fine at low temps especially with BPA free plastic.

@@cambeaukitchenthe wrap I used melted and collapsed on the flans in the oven in the first 10 minutes; is there a brand of cling wrap you would recommend?

​@@vanishingmoon1try double or triple wrapping it. You can do it at a lower temp without the wrap

i want to point out... Thats NOT coconut milk, its coconut cream. But i want to try this recipe, half my family is alergic to milk.

That's 100% false. If you look at the can it says coconut milk. There is no dairy in this recipe. If your family is allergic to cows milk, they can have this dessert

Hi Zenny, yes you definitely can. Make sure and use a pan that isn't too tall or the edges will overcook before the center cooks through. Look for something a couple inches high ideally and any shape will work but the most common is circle. Bake at 300F for about 45-60 minutes covered tightly with plastic wrap in a water bath just like in the video. Rotate the custard after about 25 minutes. Watch it closely after 45 minutes. The center should jiggle slightly but be pretty firm once it's cooked through. If you take the temp and it reads 160-165F in the center of your custard that means your eggs will set once cooled. Take off the plastic wrap and let it cool in the water bath on the counter. Remember this whole process should be done very gently as anything too aggressive won't the yield smooth creamy results you love. Thanks for watching

It's a common practice in the kitchens. However is it ideal for health? I can't speak to that. I know that it doesn't affect taste and usually is only used in low a temperature setting. It does a fantastic job. Thanks for watching

Try to triple wrap it. Or if you have a makeshift lid you can use, like a steel sheet pan that would work well too.

Not the healthiest option but it the carnel sauce turns out great. You can use only sugar. I haven't experimented with other things
