I made this yesterday. It was delicious! It was my first time using silken tofu. I didn't know what to do with it. The flavor really did taste like the real thing. Thanks for this recipe.

I’m so glad you liked it. Thank you for giving it a try! I think silken tofu is actually my favourite kind of tofu because it’s so versatile. It’s so great for sauces and dips, makes a great vegan quiche and you can even sneak it into desserts. I hope you keep experimenting with it and find more recipes you like!

made this today. i sauted spinach and tofu and garlic..blended it with the pasta water. Turned out great! Didnt need any nutritional yeast, milk nor tapioca starch! So simple!

I bookmarked this from a post you made on Reddit and finally made it tonight- it’s delicious!! I am not dairy free and love creamy pasta sauces but I’ve been looking for alternatives… thank you! I honestly can’t believe how creamy it is lol Editing to add for any non-vegans: it doesn’t taste exactly like Alfredo (how could it?) but like a creamy, lemony pasta that def satisfies the creamy craving. I also added a drizzle of olive oil to get that extra fat flavor that Alfredo has bc of the butter 😋

Big fan of using silken tofu for sauces. Cashew cream-based sauces are great, too, but they’ve really crowded out other options lately.

Yes I love cashew based sauces too but I really wanted to make this one work with just silken tofu because this way there’s no soaking required and it’s just so easy to blend. Let me know if you give this one a try!

I've been using silken tofu to make the sauce for Marry Me Chicken (Tofu). But, alfredo is my very favorite. I've missed it since giving up dairy. I'm going to try this tonight. Thanks! nom, nom, nom

@@TastyThriftyTimely will do! The MMC is delicious. I use silken for the sauce. Some recipes call for other things. I've found that using tofu makes the sauce less likely to break. Thanks again!

Update: it was better than I expected! I did a new small changes: I blended garlic instead of using garlic powder and I sauteed onions and mushrooms before making the sauce. So good

Haha yes Alfredo with shrimp was my go to. We did have a vegan shrimp product recently at a restaurant (I think the Kings brand makes a good one). I haven’t tried adding hearts of palm but that could be something to try too. I have some meals to make you now and some things to try when you come visit us! We can take you to the restaurant where we had the vegan shrimp and you can tell us what you think 😜

I usually use oat or soy because they are thicker but almond would work too. Anything that isn’t sweetened at all should work just fine 👍🏼

Is it possible to use this sauce in a lasagna as a healthier alternative to the normal white sauce? Does it hold up while baking

Yes I think that could work for sure. I would suggest cooking it first so that the starch activates and then pour it into your lasagna. You could also make the bechamel I use for my baked ziti recipe. Here's the recipe for that (tastythriftytimely.com/quick-easy-extra-creamy-bechamel/) and there is a video for my baked ziti too! Let me know what you try!

I’m not sure actually. I don’t have an instant pot unfortunately. My only thought is whether the sauce will get to a high enough heat for the starch to activate? On the stovetop, It should just come to a boil and then be reduced to a simmer for a few minutes in order to activate and thicken the sauce. If you make similar pasta dishes in your instant pot and are not sure how the starch would react you could omit it and the sauce might not be as thick but all the flavour will still be there. Let me know if you try it!

Will it work without the nutritional yeast? I can't get it. Are there any alternatives? What kind of plant milk can be used? I have oat, soy and almond milk.

You will still get a nice creamy sauce without the nutritional yeast. The flavour will be a little less rich without it but the recipe will still work. You could add in a teaspoon or two of miso paste or soy sauce to replace a bit of that savoury flavour. Or if you typically buy any “cheese” products like parmesan then adding a bit of that in will give it a touch more flavour. Soy milk will be great because it’s quite thick and creamy. As long as the plant milk is unsweetened any of them will work well. Let me know if you give it a try and if you end up adding anything in to replace the nutritional yeast!

@@TastyThriftyTimely I made it, it was yummy😋 I did make some changes, I used firm tofu since I couldn't get silken tofu, it was still very nice ,thick and creamy. I felt like it was lacking flavour and mixed in some other spices and mustard in it, I used soy sauce to get the savoury taste and used garlic cloves instead of garlic powder . I used corn starch, I could still slightly taste the starch but it wasn't overpowering so that was fine. I boiled the sauce twice to do that.

The nutritional yeast definitely adds a big boost of flavour so your additions sound like great choices for replacing some of that. I have made this with firm tofu as well and I find the tofu taste a little stronger with firm tofu than silken and the texture to be a little heavier and really thick so I’m glad you liked the creaminess! Hmm my first thought is to use some miso paste if you have it. Any ingredient that adds some savoury flavour will help achieve a bit of what the yeast is doing. I would start with adding about 1 tsp miso paste because it is quite salty but you could stir more into the sauce as it’s warming in the pan if needed. Alternatively, a bit of soy sauce, tamari or vegan Worcestershire sauce can help too (again I would add it slowly and start with 1 tbsp maybe). You could always blend the sauce without the yeast, start warming it and give it a taste to see if you think it’s missing some of that “umami flavour” then try adding a bit of miso or soy and see if it helps but you might not mind just a lighter more lemony sauce. Alternatively, if you tend to have dairy-free cheese on hand (a cream cheese or sour cream etc) you could try adding a tbsp or so of a store-bought product but those are likely to have yeast in them too. I don't have a lasagna recipe yet unfortunately! I do plan to have one out in the next few months so stay tuned. I have a video for "baked ziti" which is another Italian dish that is similar to lasagna but less structured and even easier to prepare. I'll link it here (ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-QTkvL2vWom4.html). Let me know if you're looking for an option that is closer to a meat and tomato sauce version or a vegetable lasagna... that will help me decide on which version to get out first! Thank you!

You don’t absolutely need it. The recipe will work without it but it does add quite a bit of savoury “cheesy” flavour. You might want find that you want to add in something in its place for more flavour (tamari or soy sauce can add a savoury boost, so can miso paste, you could boost up garlic and lemon juice for more flavour, or add in something like mushrooms). Let me know if you try something else and how you like it!

Hmm I can’t recall anyone letting me know if they’ve frozen it and I unfortunately haven’t tried it myself. I would think it will be ok. The texture might change a little bit but I’m not sure. You could consider omitting any starch until after it defrosts and right before you cook with it. That way you can be sure that the starch activates and thickens the sauce (sometimes it can lose strength when frozen). Let me know if you try it. I’m sorry I’m not more help right now!

I am sorry to say that I must disagree with the comments here. I made this tonight and I was disappointed. The taste may emulate the texture with a saltiness, but the overall flavor was not palatable to me. I could not eat it. Yes, creamy, yes it looks good, no it taste awful compared to real fettuccini. Then again, I use to run an Italian restaurant, so perhaps that is why my tastebuds disagree with you on this. Anyway, we all cannot agree on everything and we all are different.

Thank you for trying it. It’s certainly different than a traditional Alfredo with cheese and all that delicious dairy! If you want to try again with tofu you might want to add some extra fat in the form of butter (vegan or dairy depending on what you use). That could help provide a richer taste. Adding more garlic, some other strong herbs, and/or more lemon could give it more flavour for you even if it takes it further away from an “Alfredo” substitute. Taste buds definitely need a bit of time to get used to tofu so I hope you have a better experience if you do give it another try.

Never could get rid of the corn starch flavor. Must've stirred for 20 minutes. I think you HAVE been a vegan too long because it tasted nothing like alfredo sauce and my family gave it a thumbs down.

I’m sorry to hear this. I dedicate a whole chapter of the video (beginning at 2:15) to the fact that the sauce needs to come to a boil in order to fully activate the starch and prevent that flavour from staying in your sauce. I’m sorry that you still found the flavour prominent for you. Do you think there is a possibility the sauce only simmered and didn’t fully boil?

@@shirinnn2008 I’m sorry to hear the starch flavour stuck around for you. I know how frustrating it is when a recipe doesn’t work out the way you thought it would. I make this often with cornstarch and don’t have this issue but if you were ever inclined to try it again you could perhaps use tapioca starch and see if your results are different.
