My parents, aunts, and uncles grew up during the Great Depression. One of my uncles loved to pick and eat dandelion greens. Back then, people ate them in salads, or sautéd them, or added them to soups, or ate them on sandwiches. This is a simple, cheap, and easy recipe for Dandelion Greens and Potatoes. You can buy dandelion greens in some stores. If you are going to pick your own, make sure that you pick them from somewhere that has not been sprayed with chemicals. They are very healthy and even considered a super food.

I would love a plate of dandelion greens. Haven't had them in years. My grandfather used to bring them home from work every Friday. He worked at Edlewild airport (now JFK) back in the day. We would make a salad with the young leaves and cook the larger with garlic and Olive oil. It was delicious. Watching you cook brings back a lot of memories. Keep those videos coming.

@@semperfi818 Yep, here I am, and sow thistle is one of my very favorite wild greens, including the flower buds. My Bota friends laugh because I always have a plastic bag in my pocket for Sonchus (and other goodies like garlic mustard or Campanula tips) when we go on our field trips - "Oh, Malinda eats everything!" The nicest thing about them is that they don't get bitter like dandelions. The less prickly variety (Sonchus oleraceus), with its violet-tinted stems, is good as a salad green as well. www.eattheweeds.com/sonchus-sow-thistle-in-a-pigs-eye-2/

Glad I'm rewatching this and catching these comments. I love greens, have on occasion foraged for some, but have not heard of sow thistle. Lamb's quarters and garlic mustard yes, but sow thistle is new to me. And thanks for reminding me that I can harvest that pesky patch of invasive garlic mustard, to make up for my current lack of fresh greens. All for free, too!! I forget---any special way to treat them?

I like the addition of smoked paprika. Gives it a bit of a hammy flavor. New ingredient for me--just started using it this past week.

That's a great idea. I don't eat bacon, but I really enjoy a porky flavor. My first time using the smoked paprika earlier this week (well, technically last week, within the past 7 days) was with a bag of frozen chopped collard greens. It was pretty much the only vegetable left in the store when I went pandemic-shopping. Hadn't eaten collard greens in about 45 years of so, since my dad grew some on the farm out east when I was a kid. What am I going to do with these?? So, a little salt, pepper, garlic, EVOO, butter, cayenne, sprinkle of cider vinegar, and smoked paprika later, and it seemed like I'd been stewing them with a nice ham bone all day long, southern-style! (I must say, I was rather proud of myself for recreating that flavor profile.) As a result, I am now a new fan of the smoked paprika.

Good stuff. I love potatoes. I usually use them in my cheat meals. I think I'll sub kale for dandelions tho. Good idea on the paprika. I like to use that to spice up cabbage dishes.

Correct me if I'm wrong, Paul C, but is the cabbage-based version called colcannon? If so, I'm already a big fan...and the next time you treat yourself to a nice steak, obtain some dandelion greens and make a simple green salad with them (a good red-wine-vinegar/olive-oil dressing is all this required for my tastes, but you can use what you like here), as these greens seem to enhance the flavor and _umami_ (Japanese for "meatiness") of good beef immeasurably (the rarer, the better, at least in my pre-vegetarian experience).

Yes, colcannon would normally be mashed but would contain cabbage or kale.

Hello I just found your channel and this is the first recipe I have seen. I remember in the late 50's my grandmother would go into the yard with a knife and a bowl and cut dandelion greens in her back yard. I will make this. Thank you

If you have an outside space, it's easy to grow dandelions yourself. Use deep pots to allow for the deep taproot. Otherwise they practically grow themselves.

I tried this last night and it was delicious! The lemon juice soaked into the potatoes nicely which added a very nice counter to the bitterness of the greens. I also scrambled an egg and put it on top. I would definitely make this again!

Thanks for this, it brings back a lot of memories. My parents used to go to local fields and pick young dandelion leaves. The raw dandelion leaves were added to a salad consisting of leaf lettuce, tomato, scallion, celery, minced garlic, and chopped radish. Mix in olive oil & vinegar, salt & pepper. Now I am drooling. Thanks again!

I have used dandelion leaves in a salad and dried for tea. This recipe looks so good, never thought to mix them with potatoes. I have tried your Krupnik soup and Egg & Peppers Sandwich and love them both. I think I will try the Rhubarb Cobbler next. We have a huge rhubarb plant. Thank you for your videos. Yes, I was going to suggest the same thing, as nettles have such a high protein content that they make a good meat substitute. When you're on a budget, that's good to know.

Dandelion root coffee, I've heard of, but have never tried (being more of a tea drinker anyway) -- on the other paw, have you ever tried coffee extended with chicory, or chicory used outright by itself as a coffee substitute? Both are interesting experiences, and are frequently enjoyed in New Orleans

Wonderful recipe, thank you! I love dandelions and usually pick lots from a safe area and blanch and freeze for the winter. This will be in regular rotation for us. Topped with a couple soft boiled eggs…a treat!❤

Looks jummy! 😛 One remark only., About the cutting board. Every time a cut is made on a plastic cutting board, small , miniscul pieces of plastic is also chopped of from the board and ends in either the food or the ocean.. I saw my own plastic board full of saw marks after the knife. . Now I'm only using wood boards. Thank you for a great program.❤️

You surely can -- and when dressed simply, with a good-quality red-wine vinegar and olive oil, dandelion greens form the basis of a wonderful green complement to, say, a nice juicy steak.

Love dandelion leaves and flowers. I cut them out mine and my mom's neighbor's yards. Raw with a bit of lemon juice and parmesan. People think I'm weird but that's ok.

Sow thistle, amaranth, lamb's quarters, or blanched nettles, if you're foraging, or you could use kale, spinach, or even romaine - any leafy green would do.

For those of you that are hesitant to use dandelion look up the health benefits. they are out of this world try them they're great vegetable. Even the flower is edible

Thank you for this great recipe! Have you ever baked potatoes, cooled overnight, cubed and added dandelion greens to those? Just wondering if that would be as a good as the fresh cooked you showed us how to do? Blessings to you both

Can you use dried leaves ? Or does it have to be fresh? Was wondering about storage. Leave it in water a little before to rehydrate??

Hi I have only used fresh dandelion greens and have never used dried leaves. For storage the leaves should be rinsed in cool water and dried thoroughly and keep in an open plastic bag.❤️Grandma👩🏻

This is why people lived longer I think. They ate less meat because they could not afford it and grew their own food

People lived longer also because they had no fast food restaurants. On Sundays it was a day to relax and everyone would sit down to a big homemade meal. All stores were closed on Sundays so no one would go shopping. Thank you for watching 👩🏻

@@GrandmaFeral Yes you are right as I am in my mid 50’s so I remember very well in the 70’s my mother would always have a big dinner she would start making after church... and speaking of church, that’s another thing people don’t do anymore... it’s sad...very sad.. but yeah! I remember the adults telling each other to get your gas on Saturday because everything’s is closed Sunday. After church my Grandparents took us to the New York bakery ( we lived in PA and it was a small town with this wonderful bakery) anyway , we would get fresh pumpernickel bread and it was absolutely the best in the world then go home and mom would start dinner. We always had an early dinner on Sundays at 2. Yes those days would be wonderful to relive. Perhaps that’s what this world needs to go back to Sunday’s being with family no electron it devices just sit down and eat and talk then read the newspaper and watch movies on television that’s what we did.... i’m so grateful that I grew up in a better time it’s just terrible today in so many ways

Thank you for sharing your wonderful memories. I remember my Mom always talking about the fun times she had growing up except for the depression. As a young girl I could never really understand what she meant. When I got older I would laugh and say I was sounding like my Mother talking about the fun times I had growing up and times were so different no internet or cell phones. My friends and I would go out and have to look for a phone booth to make a call home. We would get exercise just getting up from the chair to change the channel on the TV. You can’t imagine doing that today. Those were the days to fondly remember❤️👩🏻
