Date Squares - Traditional Newfoundland - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making Date Squares, made with boiled dates and so much more. Traditional made at Christmas Time here in NL! See recipe below!

Recipe:
Ingredients:
FILLING:
500g Chopped dates
3 tbsp butter
3 tbsp brown sugar
1½ tbsp vanilla
2 cups cold or boiling water
CRUMBLE MIXTURE:
2 cups roll oats
2 cups flour
1 cup of unsweetened coconut
1 cup of brown sugar
2 tsp baking powder
1½ cups unsalted butter, cut in small cubes.
Method:
- Preheat oven to 350°F, lightly grease your pans, or line your pan with parchment paper.
- Making your FILLING:
-In a medium pot add a pack of chopped dates, 3 tbsp butter, 3 tbsp brown sugar, 1½ tbsp vanilla, and 2 cups of water. Start the pot boiling on medium heat, stir occasionally for about 15 minutes or until filling is thickened, then remove from heat.
- Making your CRUMBLE:
-In a large bowl add 2 cups roll oats, 2 cups white or brown flour, 1 cup brown sugar and 1 cup unsweetened coconut, 2 tsp baking powder, 1½ cups of cubed unsalted butter. Mix all ingredients together with your hand until all is evenly incorporated together.
- Layering your pans, in a 11 x 14 inch pan or 7 x 11 inch pan or both, start by sprinkling your crumble mixture on the bottom layer of your pans about 1/3 inch thick, press the crumble mixture down on this layer.
- Then take about 3 or four scoops of your date mixture and put on top of your crumbles, spread evenly over your crumble mixture.
- Next step sprinkle another layer of crumbles mixture over the top of the date mixture. Don't press this layer down just sprinkle over the dates.
- Bake your date squares in a pre-heated oven for 20 to 30 minutes or until golden brown. Remove from heat let cool then cut in 2 x 2 inch squares.
(Please note: I have two errors in my video, the first error is when I'm making the filing I said "2 tbsp of butter and the recipe said 3 tbsp", and when making the crust I said to use "2 tbsp of baking powder and my recipe said 2 tsp", I apologize for any confusion or inconvenience this may have cost, Bonita . )

These are great to take on a hike or long bike ride. In fact, they are often on the snack table at water stations during organized gran fondo rides. They provide great energy and pack well.

Wow, I was looking for a different type of no bake rolled oat cookie ,but I came across this one !! my mom made these when I was a boy in the 50's Bonita .!! They are the Wicked good huh? Our friends in Quebec always made these as ‘shore lunch’ treats for my boys. This is a bit different recipe, but oh, sooooo good, and each bite brings back wonderful memories. Believe it or not, I use kitchen shears to cut up my dates into small pieces!

Oh! I subscribed - I was born in the late 40's in Maine.You have many recipes from my childhood .My NaNa ,and my mom showed me how to cook.When I met my wife in 1970 I found out she was not a cook !! So ,I didn't mind being the cook for her and our two boy's. Sadly, I lost her in 2006 the day after Christmas ,so now I cook for myself .God Bless

Elizabeth Shaw Hi Elizabeth , thank you for those kind words.One of my closest buddies was named Gerald Shaw.We grew up in Exeter,Maine and then went to EastCorinth Academy.....63-67 . He stopped in our Junior year ,And went into the Army . He died before I got out in 1970 ! May this find you well....Blessings

Phillip Washburn oh no need to thank me. I think it is what any decent human being would and should do. Well you were quite a ways from me. I was born and raised in Portland well into the suburbs a mile or so from Westbrook and the Windham line. I'm so sorry to hear about your buddy! I lost my dad 4 years ago and it's always painful to lose people. Hopefully we meet new people who make us smile. Are you still in Maine or did you move away? I moved overseas with the intention of never coming back but somehow I ended up back. You take good care of yourself and be well :-)

Elizabeth Shaw When I got out of the Army in June 1970....I went back to be with my mom for two months .Then I moved to Connecticut ,to work for my Aunt & Uncle.Thats when I met my wife to be on Memorial Day '71. We were wed in '73 and had two sons .I share an apartment with my oldest son in Naugatuck ,Connecticut .My youngest son lives in Wallingford ,Connecticut about 25 miles away. This looks really good, Bonita. I have only worked with Dates a couple of times. I am happy that You have shown Us how to make a Yummy dessert. I know that dates at least the ones that I bought; were very sweet. I was thinking that is why they don’t have any confectioners sugar(powdered sugar) or any type of a glaze on them. I made these today. They were tasty but very thin. I used the pan sizes that were used in the video. Next time I make them I will use probably a 9 by 13 rectangular pan and probably a square pan. I used parkay margarine too instead of the unsalted butter because I didn't have any butter. I don't know if this changed the way the base turned out? Anyhow they are tasty but thin, so my sister who I was baking them for will have thin date squares and hopefully next year I will get it right. Thanks for sharing!

Good Questions? thank you for stopping by and for leaving a message. The extra sugar added to the dates don't stand out only blend in. If you don't want to have that extra sugar leave it out, the same as any recipe. I hope that helps and enjoy to the fullest and have a wonderful weekend. :) Bonita

Hi Bonita, I've seen so many recipes that uses baking soda, but yours call for baking powder. Is there a difference in the end result?

Oh just thought I should mention that in your video you say for filling mixture add 2 tbsp butter but in recipe above it reads 3 tbsp butter. Also for crust in video you say add 2 tbsp of baking powder but in recipe above it reads 2 tsp. I went by what was in the video because I had not seen the recipe above. Which is right? Also would using a glass dish make a difference?

Hi Madonna, Sorry for the confusion sometimes when I'm making my videos i will say the wrong amount, or the wrong word, but when I'm writing the recipe I try to write in the amount that is needed. +Bonita's Kitchen You can use a glass dish, but line the bottom with parchment paper to stop it from burning, and also using alittle more butter in this recipe will be ok. I just finished making some for Christmas and can't wait to have one.

+Bonita's Kitchen I appreciate your reply and now I know why the date squares turned out like they did. It is because I added 2 tbsp. baking powder as you said in the video. I didn't even know the recipe was there I stumbled on that by accident. I watched your video today a number of times to make sure I was doing everything as I should. I added 3 times the amount of baking powder that I should of and according to what I have read on the internet this is why the base was so flat. I have to throw everything in the garbage now and lost so much time. Please review your videos before posting so this does not happen again.
