Welcome to Bonita's Kitchen! Today we will be making AUTUMN SLAB PIE. Made with a few simple ingredient's and our recipe is posted below!!!!

Ingredients:
Recipe for PASTRY:
2 cups all-purpose flour ½ cup tender flake pure lard
½ or 1 tsp sea salt ½ cup COLD water
FILLING:
1½ cups jam, apple butter or apple sauce or filling of choice
GLAZE:
1 cup confectioners sugar 1 tsp lemon juice
4 tsp cold water
Method:
In a bowl add flour and sea salt, then cut in pure lard until all combine. After slowly add COLD water and mix with mixer or by hand.
Then form into a ball, cut in two pieces and wrap in clear wrap and put in fridge for 15 minutes or longer to cool lard.
After dust counter with flour and put one ball of pastry on it and roll into 10” x 13” piece. Then roll pastry around the roller.
Then put a piece of parchment paper on a cookie sheet, place the rolled pastry on it and roll unto paper.
Top with filling of choice and spread evenly over uncooked pastry.
Then roll the second piece of pastry and put over the top of the filling. With four fingers pinch the sides of the pastry to seal the sides.
Brush some milk over the top. Then preheat your oven to 375ºf and bake this pastry for 35 to 40 minutes.
When baked remove from oven and let rest for 5 minutes, then make your glaze.
In a bowl add confectioners sugar, lemon juice and water mix together then pour over top of the autumn slab pie!
Cut in slabs and serve hot or cold. Serve with fresh fruit or berries!!
Bonita’s Tips:
Letting the pastry go cold after it’s made helps make it more flaky when baked.
Using a ready made jam, jelly or apple sauce, work great in this recipe, but you can use fresh berries or apples tossed in flour and sugar.

Hi Bonita and Raymond. I have made these slab pies for many years. And yes, you are right they are a little bit easier then the traditional pies but equally as delicious. I am up to my eyeballs in apples right now. This morning I canned up 46 quarts of apple juice. Tomorrow I will make pies for the freezer. They will taste so good on a cold winters day. Also, I have to squeeze in time to make some apple jelly. Like I said, I have plenty of beautiful apples this year. I am so glad that you teach people how to cook like you do. Thank you. Made this one yesterday using a couple cans of drained apricots that I simmered with some sugar and mashed until thick, then chilled. It is terrific. As I live alone I froze a few slices for future desserts and saved enough for three helping this week.

That sounds lovely and I like doing that as well, but this one I liked the mixed icing sugar to soften the top. Thank you for sharing your method with us and have a wonderful week ahead....:) Bonita

I roll out a large pie dough and place it in a 10" pie dish with plenty of overhanging dough. Then I add the filling. Apples or blueberries with sugar, flour, cinnamon and nutmeg mixed in. THEN I fold the sides of the overhanging dough over the filling. In some places I cut the dough so there is not 2 layers of dough. Then I bake it as usual. It's not as pretty but it's quick. I even make PASTYS this way and cut the pie in quarters for a meal.

hi, I have some lemon curd leftover from another recipe, do you think I could mix the lemon curd with some jam and use that in the middle or should I just stick with the jam?

Hi Jean and thank you so much for your message and for stopping by. Yes for sure you can use fresh strawberries but you would have to make a dusting of flour, brown sugar and cinnamon over the strawberries so they won't leak out of the pastry. So toss the fresh strawberries in 2 tbsp flour, 2 tbsp Brown sugar and 1 tsp cinnamon and that can be less is you wish. I hope this helps and enjoy. :) Bonita
