Isi is advising strongly of not using A) more than one charger on a 0,5l cream whipper (this is engraved on the bottom of the bottle) and B) CO² chargers on a cream whipper. On the other hand, like Dave here, there are plenty of bartenders using 2 chargers on a cream whipper. And for CO², at least today, iSi claims that it's impossible to use native iSi chargers on a cream whipper (due to a larger size). Also using off-brand one is a safety hazard, due to a much higher pressure, according to their website. Now, this makes me wonder. How large of a risk it really is to use 2 chargers or a one CO² charger (if still possible) with the 0,5l model, as bartenders have done so for who knows how long.
But how did you explain 1 charger in the 0.25? The limit declared by iSi is 20bar on 0,25 lt, 24 bar on 0.5 lt, and 30 bar on 1lt. But I also had the same doubts and I see many people using 2 charges in the 0.5lt iSi gourmet whip
@@tomatojuice12 6 months later this time but that's based on his recipe! you could absolutely wait longer but you may start to get bitter/acidic notes out of the rind of the lemon that you wouldn't necessarily want. But by all means experiment & see what you like personally. It'd be the same concept if you were to just put lemons to infuse in the oil traditionally and wait a day, or 3, or 3 months - up to you, just whatever flavor profile you're looking for!.
