~Deep-fried prawn paste dumplings~
It is easy to make as all you have to do is mix the ingredients and deep-fry.
It is important to coarsely chop the prawns to preserve the texture.
I made them into bite-sized pieces and garnished them
with salt, matcha salt, and dried plum powder.
It is also a great ingredient for soups.

■Ingredients(serves 2)
8 prawns(frozen)
100g hanpen
1 tbsp potato starch
1 tbsp sake
1 tsp sugar
Some salt
A pinch of pepper
A dash of potato starch
1 sudachi※
Some salt
Some matcha salt
Some dried plums powder

※Sudachi is a citrus fruit similar to a lime.
■Directions
1.Soak the prawns in brine to thaw.
2.Cut the sudachi in half.
3.Peel the shells off the prawns, open them up and wash them in water.
Chop with a knife and place in a bowl with coarsely chopped pieces.
4.Add salt, pepper, sake, sugar, potato starch, and hanpen to a bowl and mix well.
5.Prepare deep-frying oil and heat to 180℃.
6.Divide [4] into 10 equal rounds and coat with potato starch.
7.Deep-fry for about 5 minutes and you are done.
