Dehydrating and Freeze Drying Broccoli

Whether you have a freeze dryer or a dehydrator you can dry broccoli to use any way you like. It is far more compact and easy to store since all the water has been removed. We use it for soups and stews as well as running it through the blender to produce wonderful broccoli powder that can be used in many ways.

Really appreciate that you share research-based info! I have a 30 year old dehydrator & last year got another used. Last Christmas we went in with adult kids & got a freeze dryer so we could all afford it better. Love it! I still use both methods. These vids are a lot of work & we sure appreciate them!

Your tutorial on freeze drying and flash freezing broccoli was great. One way to use the pulverized broccoli is an excellent way to add nutrition to a green soup or other green food. Picky eaters will not even notice they have been nourished. Moms have to be sneaky sometimes.

Back in the 80s I used purees to sneak in xtra nutrition. Now I love powder. My family eats a lot of nutrients weeds from the yard . Lol

I recently dehydrated frozen broccoli for the first time and was thrilled with the result. I've used them several ways, including in an excellent pantry broccoli cheese soup. Both stems and flowers had that fantastic crisp-tender texture, and rehydrated quickly. Now I'm binging on dehydrating broccoli! Should probably note that I separated the florets into similar sizes before dehydrating.

I have done both way’s. I do the freeze dryer for powders because it completely powders veggies so well. But I usually only use my freeze dryer for meats and eggs. I use my dehydrators for veggies and fruits. Although I have to say fruits work great in the freeze dryer as well. The only thing I do different is I don’t thaw my veggies. I dehydrate them frozen. Super easy and works great. Buy them, put them on my trays and hit start. I’ve been doing it this way for more years than I can count and still using the same dehydrator. However I bought a new Corsori last year. I love it.

Just finished making powder from my tomato peels. What a great idea! I had an old coffee bean grinder that had never been used. It worked great-in small batches. My kitchen aid mixer bowl was full. I blended and poured into the wet trays of the dehydrator. Those tomato "crispy fruit roll ups" ground well. I was getting ready to vaccum seal the jar when I watched this. I'll be using a coffee filter. By the way. It made just about 1 cup of powder. And smells just like a fresh tomato. I'm making meatloaf tomorrow. I think I'll add a little for seasoning.

Thanks Pam for the filter tip. So far in the "powders" series we have spinach, celery, and broccoli. I'm keeping up, but I only have a dehydrator. Looking forward to the next one.

Thank you so much Pam (and camera man Jim) 😁 I hadn’t thought of making broccoli powder until your video…I’m going to make zucchini powder and dehydrate my frozen tomatoes from last years garden to make powder and use both in soups and add to the flour in yeast bread doughs…and now I can do the same thing with the broccoli powder😃 Your videos and channel are just Top Notch and I am personally so thankful that you share all of your expertise with us…I’m still taking notes from your older videos and looking forward to each New one!!!🤗 God Bless🥰

I love it the Kelvin lab. That’s one thing I do not miss is the earthquakes. I grew up in Cali the earth never stops moving there. I love your videos. I need to bite the bullet and by a freeze dryer. I have a dehydrator and I got the instantpot max. I’m intrigued by the powdering process and how you use the powders.

Thank you, Pam & Jim!! I have started a notebook to keep your tips and tricks. Loved watching this video to see the difference between FD and dehydrated. We have a dehydrator and it does get put to good use. I use my food saver to seal jars as well. One thing I did purchase last year is a manual brake bleeder. If we have a power outage, we can still manually seal/reseal our jars to preserve food. One caveat to that, hands get a bit fatigued, but it is worth it!

You can also use a piece of cloth or cupcake liner in place of the coffee filter when vacuum sealing powder. Just make sure the cloth has not been washed with fragranced detergent.

Pam, try leaving your broccoli out the night before or pop in a low oven for a bit, that way your not washing out nutrients and not adding water . Hope that helps

I planted about 6 extra tomato plants just to make tomato powder which i use every week. Im gonna start dehydrating extra frozen veggy's now as Im looking forward to this project with veggy powders. I love looking for the frozen veggy sales in the stores and it saves me so much space in the freezer for other items.

Since I have gotten my freeze dryer I have not used my dehydrator. With the freeze dryer it turns out a much better product with more nutrients. And funny that I’m seeing this video this morning. I just put in three bags of frozen broccoli myself yesterday.

I enjoyed this video. I've watched 4 so far today. I have a dehydrator that is over 25 years old & still works. I use it mainly for herbs & teas. I dry the Mint & Lemon balm which we grow. We use it all winter as well as gift giving. I will definitely try this & see how the powder works in smoothies.

I can’t even express my appreciation for you, your time, your research and detailed explanations. You save us so much time and effort. Your science approach is invaluable. I have more confidence that I won’t kill us. Lol I’m sure that has been asked and answered somewhere, but not sure which video(s). 1. When rehydrated, what’s the texture difference between DH vs. FD? 2. Is more more nutritious vs the other? 3. Flavor difference? 4. Does one rehydrate faster than another? I’m pondering a freeze dryer purchase, but that purchase is a financial "ouch." It’s a scary plunge. Part of my DH purpose is space saving. FD seems to retain it's original size more so. :/ Another point to ponder.

I just started making up my meals in bags and this reminds me to put some of the powders in some of the meals. I found wonderful 1/5 oz jars and 4 oz jars on Amazon (big amounts of them at a good price) and it is really coming together - lots more organizing to go. This is so useful. I had not seen anyone do greens when I started a few years back and wondered how I could get my greens in (Vit K), I started making it and put it in almost everything I make. I have a f.d. and a dehydrator and have realized that I need to label which system I used - it is useful when looking for something in the pantry. I am so happy - just went out and the blackberries are finally turning black - so tomorrow, we head out on the Mule and pick berries and then next batch for f.d. is the blackberries and my grown blueberries. Nature is such a blessing. I wonder how people who never cook or grow food or look for healthier food even feel this great feeling. On Suttons Daze the other night in a canning discussion - a few people said they might be a little crazy because they love to go into the pantry and just talk to and touch and take in the beautiful colors of all the jars - I thought it was perfectly normal myself :-).

On another site, I read that cruciferous vegetables tended to taste of sulfur. Have you found that in your experience? While the crowns are tenderer, I find the stems sweeter. I love the tip about buying frozen vegetables and how they've been pre-blanched--huge time-saver! While I grow a fair amount of veggies, I don't grow broccoli either! Now that I have the unit, it might make belonging to Costco worth it again. My plan is to join every other year. It's an hour's drive each way, so I'd only go maybe five or six times a year, but I know they sell cases of eggs, the rotisserie chicken...yum!

I think I’ve mentioned this before but I’ve made flour with that Vitamix milling blade. I also have an old Champion juicer with a milling blade. Nice to have options.

I am fairly new to dehydrating and have a hard time trying to determine when things are sufficiently dehydrated. Will you please share some info and talk about the texture and how crispy things should be when done. Thank you so much.

It really can be your choice. If you are going to consume the food fairly soon, it can be more leathery than crispy. If you want to store it for a year or two, then you will want more moisture out of it, so take it to the crispy stage.

Another wonderful video. So.... I bought an Instant Pot. Not the model that does pressure canning; I have an All American pressure canner for that. I'm looking forward to having fun with my new toy. I've also been flirting with getting a dehydrator, and seeing all love your videos don'ts help my resistance at all! I want to make my own "sun dried" tomatoes, and I love tomato powder.... Having vegetable powders to flavor sauces and soups with would be so helpful. Be well.

Thanks for another great comment! I am tickled that you now have an Instant Pot. It took me a long time to take the plunge, but after I did, I wondered how I ever got along without one! LOL. We are working on our "Using Veggie Powders" video later this week and it will be released soon after. I hope you will share some of the ways you use the powders.

Great video, we will definitely try powdering som broccoli. The vacuum sealing attachment, can it be used on screw on lids? If we for example reuse a store bought glass of jam?

Thoughts on if the jars need a o2 absorber? I know you said it would last 2+ years plus like that at what point do you think a 02 absorber is needed?

Amazing. Thank You! I have a Excaliber 9 tray Dehydrator. I've dehydrated frozen vegetables before but not Broccoli. "So is frozen Broccoli the only vegetable you put in water to thaw etc before dehydrating?" Thank You for Sharing!

It is your choice. We use up ours pretty fast, so I don't bother. I we were going to store them for a year or so, then yes.

I’ve a question; do I pressure can my homemade soup or water bath them to store for long term? The soups are already cooked so is the meat inside of the ingredients. I appreciate all your advice and your videos are wonderfully informative 👍🏼🌻

Great video…I LOVE broccoli!!! I finished my first dehydrating project a couple of days ago. I got 4 pints of cabbage out of one head. Does the broccoli snap after dehydrated, or is it more leathery? 💕🌸💕

It depends on how long you leave it in to dry. I like mine as dry as I can get it, so it will make good powder.
