Carrots are a wonderful vegetable to have stored in our food supply. If you don't grow your own, watch for sales this fall and bring home a bunch to preserve by canning, freeze drying, or dehydrating. You will be very happy to have them available as ingredients for many, many dishes.

"Baby" carrots you purchase are all the reject carrots. They are cut into uniform "lengths" and put into large drums to resemble baby carrots. They are soaked in a chlorine bath... so that's why they may have turned "white." I used to work in a Produce Dept. I hope that helps!

This is true. Those chlorinated carrots have ZERO nutrients in them. I quit eating them when I learned this about 8 years ago.

I never buy baby carrots. I tasted them once years ago and thought they tasted awful and that they didn't look like what they are called 'baby' carrots. I was always suspicious about that name and thought they should look like a mini, whole carrot.

According to Snopes, that is not true. However, ‘baby carrots’ are smaller, young carrots bred to have higher sugar content to appeal more to children. ‘Baby-cut carrots’ are larger carrots pared down to the smaller size. All are rinsed in a light chlorine bath to keep them safe for transport and storage. This is industry-wide practice with most “grocery store” fresh food to prevent food-borne illness and is no more chlorine than we have in our drinking water. Trade-offs. We don’t live in a perfect world. Never have.

Aaaah, what sweetheart. Reminds me of my beloved who was as thoughtful as your Jim. On our 30th anniversary, my beloved husband took a picture of my wedding bouquet of white daisies and white roses, and had the original florist recreate my wedding bouquet. It always so very uniquely and thoughtful, a kindness I miss, but he did pass this kindness on to all our children. He passed away suddenly 5 mos after our 32nd anniversary, 7 yrs ago. It truly warms my heart to witness, a thoughtful husband cherishing his wife. Cherish every little random act❤

You are a treasure. I can see that these videos will teach people for years to come. No one that I have seen does as much research or take us through the process in such detail as you do. Hello all I vacuum sealed pot roast yesterday. It has all my seasoning, onions,carrots,Celery, rosemary in the bag. I just today read where you shouldn't vacuum seal onion & garlic. Should I take the bags out of freezer, remove these items, or am I alright. Thanks

There is a layaway plan with a down payment but your right it is expensive if you are not going to use all the time, I was thinking if you can’t afford alone go in on it with friends or groups like gardening or clubs and share the price. Just a thought 😊

Years ago when I was in school I was having trouble with my sewing machine. I talked with my teacher about the problem and she said, "Carolyn, check the nut at the wheel and see if that helps." I went back to my sewing machine and sure enough it was the nut, ME. I forgot to put the bobbin cover back on the machine. I dearly love your channel and everything that you share with us. I go the EASY route in dehydrating carrots: buy frozen slices, let them thaw, then dehydrate those babies! ALL of the work has been done before the slices hit the bag, including blanching. Prices are going up, but not quite as much for frozen veggies as for other things. A 1lb bag was $1.29 in central NC for about 1/2 of forever; it's now up to $1.69 but still a bargain with ALL of the work already done.

I buy A zure's frozen diced carrots. That way I don't have to do any processing myself. I simply put them into either the dehydrator or freeze drier. It makes life so much simpler. I have 50 lbs of frozen diced celery coming next week which I plan to dehydrate &/or freeze dry. They do all the work & I have minimal effort on my part.

@@nancyannmaushart6378 Yes although if I plan ahead I usually try to throw them in the refrigerator over night first. It's not necessary though they can be dehydrated directly from the freezer.

@@nancyannmaushart6378 Yes that's why when I remember to thaw them overnight in the fridge they dehydrate faster. With our freeze drier it's the opposite. You want to keep the carrots frozen & the freeze drying process goes faster.

Five or ten years ago I watched a video from Bexarprepper where she is microwaving shredded carrots for dehydrating. She used a plastic freezer bag and a tiny bit of water. 2.5 minutes on one side, and 2 minutes on the other side. I've been using that method, for years and I'm very happy with it. I dehydrate (in batches) about 5 pounds of shredded carrots at a time. That's the amount to fill my dehydrator. I make carrot salad with the re-hydrated shreds, and they're perfect. No one knows they're not fresh carrots.

Just general information, carrots can be grown in early spring and a second crop planted 2 or 3 weeks before autumn and then harvested after the first frost (those are extra sweet) since you're living in high desert, you might have better luck growing carrots in large planters with good quality potting soil, worm castings and a layer of mulch to help protect the carrots from heat and cold extremes.

We plant carrots late, hoop them covered in clear plastic, then harvest in February. We can grow most root crops over the winter in zone 8. Pretty much our only hope of decent carrots here.

@@dillodefense We live in zone 8b. I've had volunteer chioggia beets sprout and grow through the winter and picked them in the spring. I haven't deliberately planted a fall root crop but I just might this year. We always miss a few of the potatoes so I have volunteers that just keep on coming year after year. They are in one of those half whiskey barrels that you can sometimes find in the garden department of McClendons, Lowes and Home Depot. Only a couple of actual nurseries near us and I haven't really checked them out as they are difficult to get to. I had carrots that survived an Idaho Falls, ID winter because it snowed before I got them dug up. They were so sweet and crisp

I live in the Detroit area. My grocery store (Meijer) sells 1-lb bags of crinkle-cut sliced blanched frozen carrots for $1 per bag (on sale). One bag fills one tray in my Excalibur dehydrator, so I can dehydrate 9 lbs at a time. So easy!!! Eliminates ALL the steps. Thank you for all your fabulous information. I am learning to be creative!!❤️❤️

You can also follow your idea of buying frozen sliced carrots and drying them. That's what i did and it was wonderful!

Same to process throughout the year. If nothing from the garden, I support local farmers in the summer. In winter, just look for great buys and preserve accordingly.

I've got about a gallon of freeze dried carrots un-blanched and unsealed just to work through and so far six months later they are still very good. I'll try blanching my next batch to see the difference.

I got the food saver set years ago and it came with a manual pump rather than relying on an electric vacuum. I like to stay away from electric devices since they won’t do any good during a blackout or a power outage. I also don’t want to have a big vacuum machine on my counter all of the time. BTW, Pam, I am a high school chemistry teacher in CA. Thank you for the support that you give to the science teachers in your state. My professor for the MA in Science education was Norm Herr, if you know him…He’s growing close to retirement too, I believe, and I don’t know what we will all do without him!

Thank you for the tip about sealing regular-mouth jars. I bought a set of these vacuum attachments and have had no problems with them, but it's nice to have an option if needed.

The Ankasrum Vegetable cutter has a grey coloured attachment that holds the slicing drums in place - then it works beautifully. Check the front of the box and see the picture. I see now that you figured it out! Happy slicing and grating.

Pam thanks for the hack of turning a flat upside down. I have been using 2 flats but not one upside down. Then I have to pry the top one off. FYI Harvest Right is having a scratch and dent sale. It makes the freeze dryers several hundred dollars cheaper.

Since I started dehydrating in 2020, I keep dehydrated carrots on hand for soups & rice pilaf. I just ordered 25 lbs of carrots from Azure Standard that will be diced, blanched & put in the freezer.

I downloaded and printed your book. I have a binder that I use to put prepping recipes in (using plastic sleeves). I was blown away by the recipes and the calculations for ingredients. I love that you put in substitutions as well. I can't believe that you and Cindy put this together so quickly and to think that you work full time as well as doing a RU-vid channel! I found some fantastic ideas, recipes and it helped identify some gaps that i have. I loved it and want to thank you for putting it together for us all. 💕

You had me rolling 🤣 the way you were flustered over the stoppage. I was looking in a mirror I affirm!! Of course you reasoned it out and like the scientist you are found the solution. I would still be biting the air. 🤭 Perhaps not so much, after realizing that it was operator error. I wouldn't be speaking to myself for a whole day!!! I love to talk to myself so that would be quite the punishment!! 😉. The sticky kitchen floor, I just know you would rid your fluster by slathering up all the sticky and ousting it from the kitchen!! You mentioned in your video that vegetables don't need to be conditioned. You may want to look into this. The books I've purchased say all dehydrated foods need to be conditioned. I do as a routine, but I'm just getting started.

I dehydrated 25 pounds of carrots a few weeks ago. I use a mandolin that you push through a shoot. It only took about 30 minutes to cut all 25 pounds. I am so happy to have them in my food storage. I do not have a freeze dryer, maybe one day.

Because I love carrots and can never find any in the frozen foods section, this year I purchased a bunch from the farmer's market to freeze. After blanching and flash freezing, I put into freezer bags which are now sitting in my freezer. I don't have all your fancy gadgets, and would probably never use them, so my best course of action is freezing. Great Video! Thanks Pam!!!!

Pam, for shreds, slices and so much more, we have a Braville Sous Chef food processor. It is expensive but TOP NOTCH for ALL food prep from making nut butters to cutting French fries! It does everything with speed and precision. I can’t recommend this machine enough! Well worth the cost! That along with our VitaMix gets used DAILY in our home. ❤️

I would caution you that Auguson Farms cheese powder is not very cheesy. To me, it just tastes salty more than anything. I have been pleased with everything I have bought from them thus far, with the exception of the cheese powder. Their broccoli cheese soup is a little iffy, too, just because there are bits of dried broccoli that do not soften up and are "stalky" no matter how long you cook it. We really like their creamy potato soup!

You might be successful growing carrots in the fall. Plant the seeds now, water and cover them with cardboard or a regular board until they germinate, then take the cover off. Thin after they are up a while. You can try them in one of your raised beds or a pot. I think you will be able to grow them this way.

I have a "brake bleeder" from Amazon that I keep as backup to my FoodSaver. No electricity required. The regular food saver accessories work just fine... Both wide mouth and regular.

FYI: baby carrots in the store are cut from large carrots and then they're wash with a bleach solution. Maybe that is why the carrot powder turned white.

I have looked all over, including Amazon for the Paderno Upright Carrot Peeler - looks like they are not made anymore ... I LOVE mine, can do any carrot or parsnip in a second ! I should will mine to you when I croak ! lol

So looking forward to the next book! As much as I would like to I can't justify a freeze dryer, so I can only dehydate. Can't wait to have soups/meals in jars.

Great video! I love my kitchen aid grater for my cheese as I can’t have pre-grated cheese as the dusting they put in there doesn’t agree with me. Sugar is why I can’t have carrots anymore😟. Jim and Pam, thanks for another great video. Beautiful roses 🌹

Great and fun video. Love the roses, Jim is so sweet to brighten your days. I am so impressed with how you search for an answer to a problem and share even when it's user error. We all do things like that, and it is encouraging to me to see the calm (at least on the outside, Lol) way you handle it. Also, thanks for the Augason Farms heads up. I like Thrive Life products, but they have not had carrots or celery in stock for a while, so I grabbed some from your Amazon link. I appreciate all you do and from the comments, I think baby carrots are off my grocery list and going to only long carrots. Take care!

I only dehydrate, and although I do generally raw/blanched vegetables, I actually cook carrots nearly completely before I dehydrate them, as I find that they take forever to dehydrate and they become hardened in an unusual way.

Pam, I have a tall Foodsaver canister and have found that if a jar fits I can vaccum it in the canister. This allows me to recycle other jars like those pasta sauce comes in for my dehydrated foods! Also, I had the same problem with baby carrots and I have since learned that they are often treated with a bleach solution. That would explain the turning white and funky taste. Thank you for these videos and looking forward to your new cookbook for making meals form dried foods.

Hi Rose. I have been looking for the video you did on pressure canning whereby you tested out an electric pressure cooker that you found did get to pressure and was deemed safe for canning. I cannot for the life of me remember the name of the machine. I woul like to start canning and am wanting do do various spaghetti sauces. Love listening to your videos. You are so clear and concise and have inspired me to start storing and canning. Regards Jenny

Hi Pam /Jim Love the roses es.. Good for you Jim... A thought on Blancing!! I have a commercial size electric steamer ..Uses 400mls of water and can run for 60mns.. The baskets are much the same as the internal basket of your pan..just not as deep.. and they stack on top of each other// Dishwasher proof also, but quite adequate for doing the project you have just completed.. The device/ pan has five stacking stainless steel baskets with holes for drainage.. different veg groups can be stacked and ' Blanced at the same time.. Less mess as you can grate/ chop the product into the steamer baskets.. The timer is a god send also.. See what you think!! I think Costco dose a version of this!! Hi Pam and Jim! I cannot tell you how much I love your videos and how much I have learned from you! I am very grateful for the time and effort you put into helping us with food security! I have forgotten which video it was in (I have watched them all) but you had a butane burner on your counter that was the right size and able to take the weight of your big canner. I would love to know the make and model of that burner since I have scoured all the single burners on Amazon and have not been able to find one that meets both requirements. Thank you for all you do!

As always, great video. Regarding the bleaching out problems with carrots…yes horrible. I’ll be very interested in the large carrot verses small carrot bleaching out. I now only store them in Mylar.

I've got a hand grater similar to yours but it's manual. I haven't used it yet. I dehydrated some frozen sliced carrots turned out really dark, still had some orange to it but still... I'll shred some and blanch them next time! Tfs. Please stay safe and sending hugs to you both 💜🙏😎
