I am a newbie to dehydrating, but husband and I found out that once mushrooms are dehydrated and then rehydrated, they are LOADED with flavor that is not in the original raw mushroom. We have started to dehydrate as many mushrooms as we can (buying the already chopped ones in grocery produce section) and storing loads of them for future meals and especially holiday dishes.

@@joyceday2823 all I did was throw the sliced mushrooms on a silicon mat on a tray and dehydrated at 165 F degrees for 10 hours then vacuum packed in a canning jar . Boom! Done!

Hi Heidi! I have really been enjoying your videos and you have taught me a lot! My family and I grow oyster mushrooms commercially in Florida. I recently saw Dr. Eric Berg (On RU-vid & Rumble) tell how you can turn mushrooms into Vitamin D supplements by drying them in the sun. I think oysters absorb around 40k iu's of Vitamin D! Dehydrating oyster mushrooms only takes a few hours on a sunny Florida day because they are 90% water and dehydrate very quickly. Thanks again for all the wonderful information you provide. You have been a blessing to me and you are right, God IS good ALL the time!

I love that you revisit the dehydration methods often as it reminds me of something I forgot to try from previous videos. Also I wanted to let you know I made some rose vinegar from my roses this year. I used it yesterday to clean in my camper. Wow!! I cant believe what a wonderful experience that was and I will be experimenting more in the future. I did make some peach vinegar which turned out delicious and works wonderfully on salads!

I love to use powdered and it doubles as a thickener. Have you tried a braising method? Add butter and water and boil them - boil away the water until it startes to saute in the butter or oil of preference. If they're too chewy add a little more water then just lightly saute before adding to your dish. I do this in beef bourguignon especially. Typically, I use sauted mushrooms to add to dishes so the flavor intensifies and to me they are not as "spongy". Maybe a quick soak of the raw mushrooms in beef broth before dehydrating then ya hit two birds with one stone. Interesting many possibilities. Thanks Heidi. I am looking at growing my own, thinking of winecaps, since they grow outside, on their own. Researching oyster mushrooms right now. Sterilizing grain, inocculating with spawn, putting it in a bucket.... temp and humidity control vs buying a kit. Not sure if the drying is faster with the cotton covers but it sure is easier!!!! Thanks a ton for that tip!!!

Oh I want to buy one if those! I'm just so confused about the sizes the fittings, hoses and what type pump to use. I'm really new at this. I'm looking at them all the time but money is so tight if I chose the wrong ones. It'll take forever to save to buy the different one.

Thank you Heidi! 🙂 Yes, mushrooms really are best fresh! I Love mushrooms! Depending on the texture of the fresh mushrooms, if you put them in a paper bag loosely with the top closed well, and then into a plastic bag or other container, I've had them keep in the fridge for over a week. It creates an environment they're used to. I've only ever done that with white button or portobello mushrooms. That being said, for me, I prefer those canned. It's a texture thing.😉 I absolutely agree about the cloth covers for the dehydrator! I use them a lot! And, btw, after I dried cheese, your cleaning powder got all the oil out of the cloths. 🙂 Love and blessings! 💜

I continue to really appreciate your videos. Thank you so much! Food storage has been a big issue for me as I'm getting into preserving things and then realizing I don't have a place to put them. I have been filling up my garage during the cold winter but am thinking ahead to warmer months and how this is really not ideal. When you talked today about making sure things are in a cool, dark place I realized - I have a small closet in the house filled with games, paper products, craft items, gift wrap, a vacuum, etc that we do use pretty regularly but that we don't NEED to have stored in the house. So, I'm going to make a swap where I repurpose that indoor closet for my long term food storage and I create another organized area in the garage to swap out the items that are not temperature sensitive. I wonder how many other people have a similar closet in the house with linens or DVDs or ________ that could be relocated to their garage so their food can be kept inside? Hope this idea helps someone!

Love dehydrated Mushrooms. I know what you mean, sometimes they don't reconstitute perfectly. I pour hot water on them, leave for an hour, & if they're not quite right, I blitz the liquid & Mushrooms in my mini blender, then add to recipes. The liquid has really lovely strong in flavour. We find Morels, Chicken of the Woods, Chantarelles, & Flat Field Mushrooms. In UK we have over 15,000 Mushrooms, I don't have enough lifetime left to try many of them. Lol. 🍄 Yes, definitely get books, as some Mushrooms are mimics. TFS RC, & take care everyone.❤🙂🐶

Ohhhh I was looking for silicone mats for my Excalibur… but I also sew - I have cotton and muslin! Thanks for the tip… so here’s one for you… you can buy a plug in timer (like for a Christmas tree and set it to turn off your Nesco without a timer! Hope this help!

A few nights ago I tried sautéing some chicken-of-the-woods that I'd previously frozen and they turned out pithy and chewy. I also dehydrated some and haven't tried them yet but it sounds like the results will be similar based on your experience. How disappointing! I wish I'd eaten them fresh instead of trying to save them for a rainy day. At this point I'll either use them for tea or make a tincture like I did with the turkey tail I dried a few months ago. We usually find lots of oyster mushrooms on the deadwood here, meadow mushrooms in our pasture and morels around the fire pit but this year has been weird. I would love to try growing lion's mane mushrooms!

I’ll have to find a local mushroom hunter because I don’t trust my instincts yet. I have looked into growing my own from store bought mushrooms. One of my favorite ways to dry mushrooms is to put about 1/4 - 1/3 jar with dried cream, a few pinches of white pepper and top with mushrooms for my own mushroom soup mix. It’s probably not necessary but I do put a paper over the top before I seal the jar. I have been canning sliced mushrooms, so next batch, I will dehydrate them. Many Blessings!

My storage options are the spare bedroom which I have converted into a food storage room or an old cement block basement that gets wet when it rains hard and is usually a little damp feeling. Basement is also cooler than the main floor or upstairs spare bedroom. I keep my pressure canned meats and tomatoes in the basement. I keep my dry goods in totes, dehydrated foods in jars and bought canned goods in the upstairs storage room. I have a window air conditioner upstairs across the hall from the storage room and one downstairs on the main floor. Do you think my choices of where I am storing items is what you would choose or should I make changes? If we lose power I may need to move things to the basement or even bug out with my supplies to my mom's where she has a generator. Just curious what your thoughts are on my limited options. I very much appreciate all that you do for your viewers!! God bless.

Anything you have canned or vacuum sealed into jars should be fine in the basement. In that case cool temperatures are more important than being really dry. The jars will prevent any moisture from getting into the dried goods that are vacuum sealed. It is said that the highest temperature for food storage should not be over 70°. Mostly it is for the sake of keeping the nutrients preserved. Moisture can rust the jar bands but to help prevent rust that can then make the bands difficult to remove, you can always coat the inside of the band with coconut oil or some other food safe oil. It is really best with vacuum sealed jars that you keep the bands in place, unlike canned goods where it is best to remove the bands. If you lose a seal on dried vacuum sealed goods in a damp area, with no band to keep it tight against the jar rim, the food inside could get damp and possibly mold or in the least go stale. Of course a dry room with air conditioning is also a great option. Sounds to me you are doing a good job but just consider what you might do in the event of a power outage in summer where you cannot keep the upper rooms as cool as is best.

The last time I tried to dehydrate white cap mushrooms from the grocery store they turned black (it that normal?). I opened them a few months later and they didn't smell good so I composted them. I think it took almost 12 hours. What should the mushroom feel like when its done? I am wanting to experiment with other mushrooms from the store. I haven't checked the local co-ops for other types of mushrooms. Also is there a good book for dehydrating mushrooms specifically?

While they will darken some , they should not turn black. You may have been dehydrating on too low of a heat so that they took too long. I do not know about any book on dehydrating mushrooms, in fact I do not have a book on dehydrating foods in general. I just do things know the approximate heat setting for various items based what type of food they are or how heavy or delicate they are

​ I guess I didn't see the part that you cut them up, blanched or don't have to blanh (my main concern) dry, placed on dehydrator trays (which trays best to use and any added cheesecloth added) time and temp to dehydrate. I sure missed alot... Thanks so much for the information and your time!

I always throw my shrooms in dehydrator as soon as they come in the house from the store. We love the intense flavor. I need to find a book on wild mushrooms because I don’t want to accidentally eat something bad!!😬

No, if they had, I would have said so. I do not blanch anything before dehydrating. The only thing that really needs to be blanched are potatoes
