Delicious Banoffee Pie Recipe
Ingredients
Sweet Pastry Crust
1 3/4 cups (250g) all-purpose flour
1/4 cup (45g) powdered sugar
2/3 cup (150g) unsalted butter, chilled
1 egg
Filling
3/4 cup (150g) brown sugar
2/3 cup (150g) unsalted butter
1 tsp (5g) vanilla extract
9 oz (260g) sweetened condensed milk
2 ripe medium bananas
juice of half a lemon
Topping
3/4 cup (200ml) heavy whipping cream, chilled
1 tbsp (10g) powdered sugar
chocolate curls
INSTRUCTIONS
1. In a large bowl, whisk the flour with the powdered sugar. Cut the butter into cubes and toss it into the flour mixture. Using a fork or pastry cutter, cut the butter into the flour mixture until crumbs are formed (or pulse it in a food processor).
2. Add the egg and continue blending with the pastry cutter or fork until the eggs are evenly incorporated. Knead by hand until the dough comes together.
3. Wrap the dough in plastic wrap and let it chill in the fridge for at least 1 hour.
4. Preheat the oven to 350°F (180°C).
5. On a lightly floured surface, roll the dough to a thickness of about 1/8-inch (3 mm). Lay the dough in the 9-inch (23 cm) tart pan and press it firmly against the sides and bottom without stretching it.
6. Trim off excess dough with a rolling pin. Lightly prick the bottom of the pastry crust with a fork (this will prevent the dough from puffing up as it bakes).
7. Line a parchment paper over the dough. Fill with dried peas, rice or pie weights.
8. Bake for 20 min. Remove the weights and the parchment paper. Continue baking for another 10 minutes or until the crust is lightly golden brown.
9. Remove from oven and place on a wire rack to cool.
10. Prepare the caramel filling. Place the butter, brown sugar, vanilla extract and condensed milk in a saucepan. Bring to the boil, and cook for about 5-7 min over medium-high heat, mixing constantly.
11. Remove from heat, and pour over the crust. Let cool for at least 2 hours.
12. Sprinkle lemon juice over the bananas and slice thinly. Arrange bananas over the caramel filling in one layer.
13. In a large bowl, whisk the heavy cream with powdered sugar until stiff peaks form.
14. Spread the whipped cream over the filling and garnish with chocolate curls. Chill until ready to serve. Enjoy!
