How To Make a Mirror Glaze
Ingredients:
10 g sheets gelatin
150g granulated sugar
75 ml water
150 g glucose or light corn syrup
150 g white chocolate
95g sweetened condensed milk
cold water for gelatin
Instructions
1. Place the gelatin sheets in a bowl of cold water to bloom.
2. Pour the sugar, glucose syrup, and water into a saucepan. Bring the mixture to a simmer and take it off of the heat. Take the gelatin sheets out of the water and wring out the excess.
3. Put the white chocolate into a large bowl, and add gelatin. Pour the boiling mixture and condensed milk over the chocolate and let stand for 2-3 minutes.
4. Add your color. I used two drop of Americolor "electric orange" gel. Blend with an immersion blender to remove lumps and air bubbles. Sieve the mix into a large jug or vertical container to remove any excess bubbles.Press a piece of plastic wrap against the surface and and refrigerate for 12 hours or overnight to stabilize.
5. Melt the glaze in the microwave or bain-marie. Place a candy thermometer in the mixture and allow the mirror glaze to cool to the target temperature, which is about 91-95°F (33-35°C).
6. When the glaze is between 91-95°F (33-35°C), it is ready to be poured over the cake. Pour the glaze over the frozen cakes in a circular motion.
