INGREDIENTS
Dressing
½ cup olive oil or avocado oil
1 tbsp lemon zest
¼ cup fresh squeezed lemon juice
2 tsp honey
1 tsp Dijon mustard • Fresh Dijon Mustard re...
1 tsp thyme
3 cloves garlic, pressed
½ tsp pink Himalayan salt
Pepper to taste
Pasta Salad
1 lb penne pasta, cooked al dente
1 lb boneless skinless chicken, grilled and chopped

10 oz grape tomatoes, halved
4 green onions, chopped
½ cup fresh basil, chopped
1 cup shredded or shaved parmesan cheese
Celtic Sea salt and pepper to taste
Optionally, top with additional basil and parmesan
INSTRUCTIONS
1. Combine all of the ingredients for the dressing in a bowl, set aside.
2. Start the pasta cooking, don’t forget to salt the boiling water first! Cook to al dente, then drain and rinse with cold water to cool. Allow the pasta to fully drain, tossing the pasta a few times to move the water out of the pasta.
3. While that’s cooking, chop and cook the bacon to crip.
4. In a large bowl combine the dressing and the well-drained pasta. Stir well, then let sit for 10 minutes stirring a few times. Don’t skip the resting time!
5. Add the chicken, bacon, tomatoes, onion, basil, parmesan cheese, salt and pepper then stir to combine.
6. Check your flavors, add any additional lemon, salt or pepper now.
TIPS
Do salt your boiling water
Do rinse the pasta well and allow full draining
Do allow the pasta to sit in the dressing for at least 10 minutes, 30 is better
Don’t rush the rest
Do use flame grilled chicken if you can, flavor elevation at its best!
