Delicious Copycat Recipe For Tommy's Famous Chili Burgers, Dogs, And Fries!

Original Tommy's Chili is special. It is the perfect recipe to go on Chili Dogs, Chili Fries and of course, Chili Burgers. It's not hard to make at all and in just a few minutes you can have your own Original Tommy's Chili at home, even if you don't live in So Cal! Enjoy!
Original Tommy's Chili Recipe:
1 pound Ground Beef
1 Large Carrot, finely shredded
Seasoning Mix
3 Tbsp Chili Powder
1 tsp Paprika
1 tsp Onion powder
1 tsp Garlic Powder
1 tsp Cumin (added this after the video, they do have cumin in their chili)
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Cayenne Pepper
Thickeners
2 Tbsp Masa Harina (corn flour)
1/4 cup AP Flour
Liquids
2 Cups Beef Broth
1/4 tsp White Distilled Vinegar

You did an excellent presentation of Tommy's fare, they also have five other burger configurations as well as a Chili Tamale, a breakfast sandwich and a breakfast burrito. They give extra chili if you request it. They will hold the mustard or the chili also if you want. Truly a southern California institution. All family owned, no franchises. The person cooking the burger hears you give the order and the food is ready by the time you get your change. Realy fast food.

I watched a video of Tommy's chili last night and that recipe was made a little different. They had a jalapeño that was also chopped up fine with the carrot. Theirs had different seasonings and barley flour. The flour was also toasted in a dry pan before mixing with water. And left to simmer for an hour stirring occasionally. No wait time for eating. He said that recipe was the closest to Tommy's that he has tried.

Tommy's stopped making their own chili several years ago. There is an "original" recipe and the new recipe. I was trying to recreate the original from the 1940s and '50s. That was greek chili and had very little Latin influence. The modern chili has a ton of Latin ingredients.

Yup. Looks like Original Tommy's chilli. Yummy. Oh and by the way, I do cook my hot dogs in the oven. I also cook my Italian sausages in the oven, when I make Italian sausage, onion, and bell pepper sandwiches or pasta etc... I just jabb the skins with a fork, so they don't break, I cook them at 375 for about a half hour or so, but yeah, it works great. Thank you for sharing your video ❤❤❤

Going to cook this chili next week! I hate cooking but I miss my Tommy's Burger visits when I lived in Los Angeles for 48 years and now living in Seattle so I need to get it right 👍 I hope to repost my results

Now i take my son to the local Tommy's that has weekly promotions and specials . Thanks for posting this , we will try to make it . Though when they have the chili 32z on promotion for $7.99 its easy to buy 3 and freeze 2

A great and cleaner! way haha to get the ground beef really fine is to start cold and pour your liquid over it and work it with your hands.

That is how most "diner chili" is made and it makes great chili. This chili is a bit darker so I was trying to toast the spices before the water went in. The "meat mashers" you can get on Amazon or other places work great too.

Those look delicious! I suspect I gained about a pound, just watching you assemble them. I often do dogs and brats in the convection oven, and it crisps them up, nicely. I suspect one o' them air-fryer thingies would do so, too, but I don't have one.

I lost a couple of pounds just making this video. Don't worry, I found it almost immediately. My wife wolfed down that chili dog like it owed her money! Air Fryer is a great idea for cooking dogs. I also do not have one and my kitchen is maxed out for stuff... Some day!

I'm not familiar with Cupid's Chili. I have been eating Tommy's since high school so I had some experience there. I will look up Cupid's and see if I can find some info. Thanks for the comment!

I grew up in my party years going to the original Tommy's shack , after a night of clubbing in Hollywood in the 70s and 80s . We went to Rodney's B's for the latest English and Punk . Also the On Club for local reggae bands like Small Axe and Ital Roots . Then at 1:30 am to 3:00 am we would hang out eating Tommy's burgers and fries and a canned soda . The only bad thing is that the people were all different and didn't socialize or talk too much to each other

I spent too many nights seeing bad hair metal bands (and a few great ones) in the early to mid 80's in Hollywood. Seems like a distant dream now. How did that world exist. How did it turn into this one?

Wasn’t there either a pickle or a jalapeño on the fries? It’s been 40 years…..but I recall the best ever chile tamale with something sour and green on it. Delish!

70/30 would work great, if you can find it. 80/20 works too but you don't want to go any leaner than that. Fat is not just for flavor in this. The recipe needs enough fat to get the correct consistency.

Weinerschnitzel chili is or was very close to the chilito chili. Wolf brand no beans is very close. A pinch if msg and mustard makes it super close imo. Ive tried many copy cats but cant hit the mark​@@howtocooke

Great video. I've watched quite a few Tommy's copycat videos, and the results always look too chunky... I think you got the closest. I've eaten and analyzed enough Tommy's chili to know the meat had to be minced to really get it right. One of the other videos took the cooked meat out and made a dark roux with the fat and masa, then added the meat back, but he didn't mince it. I'm going to try putting the cooked meat in the blender and making the dark roux at that point.

Thanks for your comment. You have a good eye. Getting the meat small enough really is key. It changes the texture and even taste of the chili. I finally got a "Meat Masher" off Amazon and that makes breaking up the meat really easy. No need to blend or chop it. $8 well spent! Creating a roux is very important but there are a couple of ways to do it. "Diner" chili, and that is the style of Tommy's, can be done in the meat (as I did) or separately, as you described. A lot of times people will make a "slurry" and add that to the meat after the water or stock goes in. Masa is very different from wheat flour (ap flour) and is generally used to make a slurry (a little liquid mixed with the masa) and will thicken the chili further. It is also used to soak up the extra fat and adds silkiness to the chili. This is why Tommy's seems to use it. Others will use oat flour for the same reason but that is tasteless compared to masa. You can't really make a true roux with anything but flour. The gluten and such react with the fat and build the structures that thicken sauces and chili. Use a 1/4 cup of drained fat and the flour to make the roux and add the masa to the meat to absorb the rest of the fat. Should turn out great!

Really? I was at the one in Monrovia two days ago and it was under $20! The #1 IS a double cheeseburger and their most expensive combo as I recall...Of course our sales tax in Monrovia is 10.25% so THAT adds up...I did notice the tamale( which I normally get) was up to aot $8- and I remember when they were under $2!!! Or is $25 the Uber Eats pricing?

It went back on the stove on low until it started to simmer. Give it a stir and let it heat another 10min or so and then it's ready to use.

You are correct but remember this was a greek chili recipe from 1948. I doubt they knew what cumin was.

@@howtocooke They knew what Masa was. And yes, Greeks use cumin in their cooking. You also left out a couple of spices, and you should add your spices in when you double grind the beef, toasted ,if you want. I used to work for a Greek chef back in the 60's.

The Ripper Dog! Forgot to mention frying a dog. They are amazing! I would say if you are going to fry a hotdog to not shallow fry them in a frying pan like I did the fries. Some dogs get a bit "energetic" and hot oil splashing around tends to catch fire and burn your house down. Use a tall sided pot if you are frying dogs for the first time. Thanks for the comment!

@@rebelstudio2720 If you use good quality hot dogs it works great. The cheap ones have higher fat content that can get 'energetic' when they are fried.
