Made these for dinner tonight, and they were perfection! The whole family loved them. We even made the cocktail! This recipe will be on repeat this summer. It was my first time using Finches and Brushfire's products ... they are delicious and high-quality.

You won’t be disappointed w Meat Church rubs. Can affirm Holy Voodoo on wings. I do 2/2/1 Holy Voodoo/buttery chicken/pepper. Sauce w Sweat Baby Rays for most and Buffalo for the hearty. Dang I want some wings now.

The reference to Leo Gallagher caught me by surprise. it's been years since I saw any of his stand-up specials, and he's mostly been forgotten since his death. So that was a huge blast from the past.

Ordered the ingredients and made these as shown for the Chesney show yesterday at Gillette Stadium. They were a huge hit and flavors were amazing. I’ll be sure to stock Finch’s and Brushfire for the future.

Absolutely agree with making a recipe your own. My only self-imposed rule is, make it once by the book to see where you're at. Then, change-up as desired. Matt, finally got ahold of Blanco here in Kelowna. Love it!

mix that voodoo seasoning with equal amount of cornstarch to make more of a pebble-y texture and toss the wings in it and the wings get that oh so delicious crunch when grilling
You certainly can but crunch wasn't my goal on this cook. I have videos with that technique and other crisping techniques. 2 really goof crispy chicken wings videos on this channel. Cheers!

Fantastic as always. When I would go surfing down in Baja, we called our cocktail "Baja Fog". Take a Corona, chug the first gulp, then fill the neck with tequila and add a lime :: Simple living!!! PS: love prickly pear in most anything. PSS: laughed my ass off over the Gallagher reference (RIP).
Holy Voodoo is probably my favorite of your rubs Matt. It just goes with everything. Never thought about it on wings, but got to give it a shot now. RTR as well!

I knew about the Jam thing, tried it a few times with Habenero Bacon Jam, just never thought to combine it with a Barbecue sauce. Good idea! If you hang around smart people (watch their videos), you’ll get smarter. Thanks Matt!
Hey Matt....if I'm doing these on a Kamado Joe, would I just get to 450 and leave the dome open? I know if you close it they cook much faster and hotter. Also thinking the higher grill grate because lower tends to flame up and burn the skin...thoughts?

! We would have made it but my wife lost her purse in Austin so we had to spend some time calling different locations and track it down ! lol But the Lord stepped in and we were able to find it !
Hey boss quick question. Most videos of elite grillers that i see use those briskets or whatever they are called instead of charcoal. Are those better? How do you get them so hot. I am here working in africa and thats pretty much all they sell. But getting them lit is a task in itself, not to mention getting them piping hot. Lol
After watching the video, i immediately ordered some of the BBQ sauce and jam. The sauce came in without any problems, but my order for the jam is still waiting. Here is their reply.
