CABBAGE AND PEAS SUBJI
Ingredients:
700gms - Cabbage
1 cup - Peas
1 large - Tomato
1 - Onion sliced
Whole Spices:
1tsp - Cumin seeds
1tsp - Mustard seeds
2 - Dried red chilies
1/4tsp - Asafetida (hing)
Other Ingredients:
½ tsp - Turmeric powder
1 1/2tsp - Coriander powder
1tsp - Amchur (mango powder)
1tsp - Garam masala
3-4 - Fresh green chilies
1tsp - Ginger crushed
1tsp - Garlic crushed
4tbsp - Oil
1tsp - Salt or to taste
Fresh coriander leaves for garnishing.
Method:
• Start by adding your oil to a heated pan. Once hot add your whole spices including the red dried chilli and asafetida powder. Stir for a minute.
• Now add the fresh crushed ginger and garlic and stir for a minute.
• Add the sliced onions and cook till translucent.
• Now add the cabbage and stir through, then cover with a lid and cook for 5 minutes.
• Add the peas, tomatoes, salt, and all the dry spices except for the amchur/mango powder and garam masala.
• Cook the cabbage for approx. 15mins with the lid on making sure to stir in-between a few times.
• When the cabbage is cooked add the amchur/mango and garam masala powder and mix through. Cover with a lid and let it cook for 2 mins.
• Once done garnish with fresh coriander leaves.
