I make a similar recipe. I use half the cheese in the batter, top the hot cooked cornbread with a layer of pulled pork or pull chicken, sprinkle with the other half of the cheese and pop it back in the oven for a few minutes to melt the cheese. I also sub sour cream for the buttermilk. So very good and great for a pot luck. I'm going to try your recipe with the pulled meat & cheese topping!
Just watched Come Sit At My Table and Tom was making biscuits with the formula L flour. I have never used it and get the same results with self rising flour. They look the same and are really good. My husband thinks they are the best and thats all that matters. I learned about you from Tom.

I like adding sour cream along with chopped onion, chopped bell peppers, small can of pimiento. Perfection! That’s how I learned to make it and obviously optional.

I am not sure why you have not had cornbread in a year, but I am gluten free, so instead of cornmeal mix I use yellow corneal mixed with white fine cornmeal about a 2/3 to 1/3 ratio, no flour, and add all your other ingredients works great
Word to the wise, best to wash your hands after handling any hot peppers because you could forget and rub your eyes or touch a child or pet. The oil hangs on to the skin even after one washing.
Not sure what diet you are on, but keep it up! Looking great, and I’m sure your health is benefiting, you not missing anything by avoiding the sugar and unhealthy carbs😉
Love this recipe. But just want to know what ingredients are in the cornmeal mix? We dont have it in South Africa. I am not sure if its a mixture with maybe baking powder etc? 🌻🌻I know plain cornmeal but not the mix that are in your recipe 🌻
Oops looks so good! But what do you mean by cornmeal mix? Jiffy? Or the round box of cornmeal? Or is it flour? I'm in upstate new york, and I'm not sure we have too many choices. I made a similar cornbread copy cat that used white cake mix. It was good, but was sweet and had with BBQ. If you get a chance, not sure what mix is considered 'not sweet. Us northerners need some southern cooking lessons! Lol. Love seeing your videos. Blessings
