Pineapple Delight
Ingredients for Biscuit Crust:
Digestive Biscuits 2 cups
NESTLÉ MILKPAK Unsalted Dairy Butter (melted) 1 cup
Ingredients for Whipped Cream:
NESTLÉ MILKPAK Whipping Cream 1 pack
Ingredients for Cream Cheese Mixture:
Cream cheese 1 ½ cup
Icing sugar 1 cup
Ingredients for Delight Mixture:
Whipped cream
Cream cheese mixture
Pineapple chunks 1 ½ cup
Pineapple essence 1 tsp
Yellow food color 1/2 tsp
Ingredients for Assembling:
Biscuit crust
Delight mixture
Pineapple slices as required
Red cherry as required
Desiccated coconut (roasted) as required
Directions for Biscuit Crust Preparation:
1. In a grinder add biscuits and grind them well. Add NESTLÉ MILKPAK Unsalted Dairy Butter and grind it again.
2. Transfer it to a serving dish and refrigerate for 10-15 mins. Set aside.
Directions for Whipped Cream Preparation:
3. In a bowl add NESTLÉ MILKPAK Whipping Cream and beat until fluffy and stiff peaks form.
Note: Chill the cream overnight in the fridge and whip it with an electric beater.
Note: Do not put in freezer to chill, cream won’t whip once it gets gold temperature shock.
Directions for Cream Cheese Mixture Preparation:
4. In a bowl add cream cheese, icing sugar and beat it well with beater until creamy in texture. Set aside.
Directions for Delight Mixture Preparation:
5. In a bowl add whipped cream, cream cheese mixture, pineapple chunks, pineapple essence, yellow food color and mix it well. Set aside.
Directions for Assembling:
6. In the serving dish with biscuit crust, spread a layer of delight mixture and refrigerate it again for 1-2 hours.
7. Place pineapple slices and cherries on top and sprinkle desiccated coconut.
8. Your Pineapple Delight is ready. Serve and enjoy.
