2.5 lbs Whole Fish { Tilapia } scaled and cleaned.
Salt and Pepper
1 Tbs Spice Rub
2 Tbs Vegetable oil
2 Russet potatoes , peeled and diced
1 Medium red onion, peeled and sliced
1/2 Red bell pepper, julienne
1/2 Yellow bell pepper , julienne
1/2 Green bell pepper, julienne
1 Small head broccoli
2 cups Cherry tomatoes, mixed colors if available
1 Lemon , thinly sliced
4 Cloves Garlic, chopped
Salt and pepper to taste
1 Tsp Spice Rub
About 4 Tbs water
Cilantro to garnish
Spice Rub
1 Tsp Cumin powder
1 Tbs Coriander powder
1 Tsp Onion powder
1 Tsp Garlic powder
1 Tsp Chili powder
1 Tsp Fennel powder
1 Tsp Garam Masala powder
1/2 Tsp Black pepper , ground
1 Tsp Smoked paprika
Mix everything together in a bowl . This recipe makes extra rub / spice mix . Transfer to a container and cover with a tight lid , date label and store .
