Ingredients:
-oxtail
-1bell pepper
-1 bunch green onion
-1 yellow onion
-2 whole carrots
5-6 cups beef broth
-1 habenero pepper
1 tbsp Worcestershire sauce
1/3 cup browning
-3 tbsp soy sauce
-2 tbsp minced garlic
1 tsp ginger
-1 tbsp brown sugar
-1 tsp onion powder
-1 tsp garlic powder
1 tsp salt
1 tsp pepper
2 tbsp ketchup
1 small can butter beans
Directions:
1. Chop veggies then set aside.
2. Season oxtail with Worcestershire sauce, soy sauce, browning, onion powder, garlic powder, salt, pepper and brown sugar. Let marinate for 30 minutes or longer.
3. Sear oxtail on all sides for about 6 minutes or until golden brown.
4. To a large pot, sauté leftover marinade then add ginger and minced garlic.
5. Add in 2 cups of beef broth then add in oxtail. Add in remainder beef broth.
6. Let oxtail cook for a total of 3 hrs. Check them every hr and add 1 cup boiling water.
7. Once oxtail are tender, add in ketchup and butter beans and let cook for an additional 20 minutes.
8. Serve over rice & enjoy!
